First prepare the jelly: leave the gelatine in cold water for at least 5-10 minutes.
Squeeze oranges until 120 ml of juice is obtained, then put the orange juice and sugar in a saucepan and start heating over low heat.
When the sugar is well dissolved and before the boiling begins, add the gelatin after squeezing it gently and stir to melt it.

Once the gelatine has dissolved, immediately remove from the heat and pour the gelatin onto the oven tray lined with parchment paper.
Let it cool for at least 1 hour or until it has hardened.

Cut the pandoro into slices and thin it with a rolling pin, then make circles with a 7 cm pastry cutter.

Melt the chocolate in the microwave or in a water bath.

When it has solidified, make circles in the jelly as well, using a 6 cm pastry cutter.
Then start assembling your cupcakes: put a circle of jelly on each circle of pandoro, then cover with the melted chocolate.

Before the chocolate solidifies, decorate as desired with candied orange, then let it dry for at least 1 hour.

The jaffa cakes are ready, you just have to enjoy them.
