Our journey to discover regional flavors continues. We are in Lombardy where, after the marubini with vegetables and crispy bacon, we discover the Herbal butter michette and candlesa reinterpretation of bread and butter for an original and bright start to the meal.

To make butter candles, tie the kitchen twine to a toothpick, place it on the glass and fill with the melted clarified butter. After they have solidified in the fridge, place the candles in the cavity of the michette without the caps, light and melt the butter, to be collected with pieces of other bread.

The recipe is an idea of Ilaria Castelli: from Lombardy, 47 years old, she founded Chef and the City in Milan, a cooking school that welcomes students from all over the world. She also does catering and home chef services. Her cuisine is an anti-waste cuisine that seeks “primary, natural and original” flavours. You studied cooking at the Milan Polytechnic of Commerce but also in Morocco and Oman, in Barcelona and St. Petersburg.

There “my way” omelette with courgettes and mozzarella it is a recipe from the cook Aurora Cacciari – Chiara Maci’s mother as well as one of the first Italian AIS sommeliers – who explains to us: «It is an easy, quick and economical preparation that is always a great success. It’s made even easier by the fact that there’s no need to flip the omelette in the pan.”

Advice

To make this omelette we first cooked the courgettes, browning them in a pan, and then added the beaten eggs and the diced mozzarella, continuing the cooking until the mozzarella had melted and the eggs had set, without ever needing to turn it. Excellent to serve hot with the mozzarella still stringy, but also very good warm or cold, as a practical packed lunch for a trip out of town.

Which sugar to use to make shortcrust pastry?

Classic shortcrust pastry wants it caster sugarbut it can also be prepared with lo icing sugar, muscovado or brown sugar. In the first case the pasta will become very crumbly, almost sandy and will tend to melt in the mouth; with brown sugar it will be more rustic and easier to crumble; the moscovado has a slight liquorice taste, which should be taken into account: you can avoid flavoring the mixture with lemon zest or you will have to use more, and also choose a jam with a strong flavour.

Which flour to use for shortcrust pastry?

You can also use 50% wholemeal or spelled flour to mix with 00 flour: in this case the dough will have a less fine consistency. If desired, you can add a pinch of yeast, which will give the dough a little softness. You can replace lemon zest with vanilla, cinnamon, licorice in powder.
