Greek plum cake recipe with feta and olives


  • 200 g flour
  • 120 g feta
  • 50 g pitted black olives
  • 40 g pine nuts
  • 10 g baking powder for savory pies

For the recipe of the Greek plum cake with feta and olives, chop the dried tomatoes, roughly chop the olives. Cut the feta into cubes and fillets about ten mint leaves and mix everything.

Beat the eggs, add the flour, baking powder and a pinch of salt, then 80 g of oil, 80 g of milk, 30 g of wine, ground pepper: you will obtain a semi-liquid mixture. Finally incorporate the chopped olives so that everything is perfectly distributed.

Line a rectangular mold of one liter capacity with parchment paper, grease it with oil, fill it 3/4 with the dough and sprinkle the surface with the pine nuts. Bake at 180 ° C for about 1 hour, take out of the oven and let cool on a wire rack.

  • 300 g unprocessed Abate pears
  • 230 g brown sugar
  • 200 g 00 flour

  • 60 g dry amaretti biscuits

  • 8 g baking powder

For the recipe of the plum cake with pears and amaretti with crumble, mix the flours and sugar, then mix the butter, cold from the refrigerator, cut into small pieces. Blend everything until you get a sandy consistency. Let it rest in the refrigerator.
FOR PLUM CAKES
Grate the pears in flakes keeping the peel and mix them with a teaspoon of cinnamon, the liqueur and all the grated zest of the lemon. Coarsely chop the nuts and amaretti keeping them separate. Mix the flour and baking powder. Mix the yogurt with the oil and brown sugar; add egg and 2 yolks, walnuts and pears, mixing well, then, add the flour, continuing to mix with a spatula, and finally the chopped amaretti.
Beat 2 egg whites until stiff and gently add them to the dough. Butter 15-17 rectangular molds (9 × 5 cm, h 4 cm) and sprinkle them with a little flour; distribute the dough up to three quarters of the height, then complete with 1 generous spoonful of crumble and cook at 170 ° C, in a ventilated mode, for 25-30 minutes. Turn out the plum cakes, leave to cool and serve, decorating as desired with pear slices.

  • 200 g mascarpone
  • 180 g flour
  • 3 pcs eggs
  • 150 g zucchini (green part)
  • 120 g cauliflower with florets
  • 100 g peeled carrots
  • 100 g shelled peas or edamame
  • 100 g sweet scamorza
  • 100 g sunflower oil
  • 100 g milk
  • 80 g Brussels sprouts
  • 50 g pitted taggiasche olives
  • 50 g Grana Padano Dop
  • 16 g baking powder for pizzas and savory pies
  • pesto

For the vegetable plum cake recipe, cut all the vegetables and the scamorza into cubes of the same size. In a bowl mix the flour with the eggs, the milk, the grated parmesan, the yeast and, finally, the oil. Once you have obtained a homogeneous mixture, stir in the vegetables and diced scamorza, olives and peas, stirring carefully. Coat 2 plum cake molds (1 liter) with baking paper and fill them with the mixture, remaining a couple of centimeters below the edge.
Cover the molds with aluminum foil and bake at 180 ° C for 25-30 minutes. Then remove the aluminum and cook for another 40 minutes. Take the plum cakes out of the oven, let them cool lying on their side, then turn them out and serve them in slices, accompanying them with the mascarpone mixed with 2-3 spoonfuls of pesto.
