There mozzarella mousse it is an interesting idea, effective, yet very simple, to bring to the table an aperitif or appetizer different from the usual and ready in a few minutes. It is essentially mozzarella pureed with cream, salt and oil, which I served in small bowls, on a base of dried cherry tomatoes and decorated with fresh basil. The mix of flavor is really perfect and the result pleasantly captivating, try it to believe it!

First, cut the mozzarella into pieces, put it in a mixer, add cream, salt and oil and blend until you get a thick cream.

Assemble your glasses: put the cherry tomatoes on the bottom (if you break them up they will also be more practical to eat), then cover with a nice layer of mousse.

The mozzarella mousse is ready: decorate with fresh basil and serve immediately.

If you want, you can change the proportions between the ingredients, in order to adapt them to your tastes, or the portions, in order to vary and make a second dish, or maybe an appetizer. As an extra touch, I added 1 tablespoon of parsley pesto, but if you want you can use normal pesto or leave only salt and oil as a dressing for your salad. In short, despite being a very simple dish as you can see it also has its own versatility;)

First wash the peppers, peel them and cut them into short and thin strips.
Also cut the fiordilatte into cubes.

Put the peppers in a bowl, add the onion into thin slices, add pesto, mozzarella, salt and oil and mix.

The salad of raw peppers and mozzarella is ready: serve it immediately or keep it in the fridge until ready to serve it.

  • 300 g 2 cucumbers
  • 300 g 2 mozzarella
  • 120 g cherry tomatoes
  • 60 g green olives
  • 20 g desalted capers

To prepare tomatoes and cucumbers with avocado and mozzarella, peel the cucumbers into strips and cut them into chunks; cut the green onion into slices and the tomatoes in half.
Jumbled up all with chopped olives and capers; season with salt, lemon juice, oil, pepper and dill and complete with 1 tablespoon of sesame seeds.
Cut the avocado into four wedges and sprinkle it with a little lemon juice so as not to blacken it. Divide the mozzarella in half.
Reheat the piadine for 4-5 minutes in the oven at 180 ° C and cut them into pieces.
