Valtellina land of vines, recognized for the production of some varieties of apples and buckwheat, has been known for some years also for the production of excellent blueberries.

Today, the cultivation of Valtellina blueberries has reached a good level of production, and other varieties are being tested, to the point of deserving the name of blue valley.
Blueberries are, for all intents and purposes, counted among the typical products and are used for the preparation of pies and cakes such as the simple and incredibly good one, with buckwheat flour and local blueberry jam or, in season, a compote of fresh fruits and sugar.

Here we propose a variant with the addition of hazelnut flour which makes the dough softer, also giving it a more delicate and refined taste.

Ingredients

100 g of buckwheat flour
150 g of 00 flour
150 g of hazelnut flour
6 eggs
300 g of sugar
100 g of melted butter
1 sachet of yeast
1 jar of blueberry jam

Method

Beat the eggs vigorously with the sugar, add the melted butter. Incorporate the flour and baking powder gently with a wooden spoon. Pour into a cake pan, previously buttered and floured and bake at 150 ° for 45 minutes. Remove it from the oven when cooked, cut into two disks and distribute a generous layer of jam. Cover with the second disk and sprinkle with plenty of icing sugar. You can further enrich the dessert by covering it with a light layer of whipped cream and fresh blueberries.

Black, red and blue: these are the blueberries, small berries that grow spontaneously along the mountain paths between the end of July and August. Perfect to eat when freshly picked, they are perfect as a garnish for desserts or cooked with meat and fish.

They are born in the undergrowth, in bushes little more than half a meter high, they are small and (often) black: i blueberries they are the most loved among the berries, for their unmistakable flavor and for theirs antioxidant properties. Ricotta and blueberry cream

A sweet easy and quick to make. Take 600 g of sheep's milk ricotta, work it with a wooden spoon until it becomes soft. Add 3 tablespoons of brown sugar and mix well, until the sugar has completely blended. Melt a knob of butter in a pan and then add 400 g of blueberries. Cover and cook over low heat until they are flaked. Then transfer them to a bowl e blend them with a mixer. Place the ricotta in 4 small bowls, add a tablespoon of blueberry cream still hot and sprinkle everything with flakes of almond. Serve immediately.

Risotto with blueberries

An unusual and interesting dish. To prepare the risotto with blueberries, take 150 g of blueberries and cook them with a little water in a non-stick pan. Cooking will allow the blueberries to maintain their beautiful color. Brown 150 g of crumbled pork sausage with a little oil and a sprig of sage. Slice a small onion, fry in a little oil, add the rice, toast it over a high heat, pour in a finger of wine and continue cooking, stirring often, adding the hot stock (about 1,200 liters) a little at a time. . After 15 minutes add the cooked blueberries which you will have smoothie, the sausage, salt and pepper; stir in plenty of grated cheese and serve immediately with a few fresh blueberries.

For a light and tasty lunch break. Take the smoked swordfish slices and cut them into strips. Put the bowl in a bowl valerian cleaned and dried, peeled alive slices of an orange and then cut them in half. Unite i blueberries, washed and dried, pine nuts and carrots julienne cut. Season the salad with an emulsion made with the juice of a filtered orange, a tablespoon of extra virgin olive oil and Maldon salt.

Pork fillet with blueberries and mint

Get yourself a pork fillet to prepare this dish. Cut it into cubes, place it in a large bowl and leave it to marinate for two hours in half a glass of soy sauce and half a glass of balsamic vinegar. Put in a non-stick pan 50 g of butter and blueberries. Add a tablespoon of sugar cane and brown until the sugar has completely melted. In the same pot then add the meat, drained from the marinade and cook over high heat for about ten minutes. Turn off, add the mint leaves and serve.

What's better than this snack for children, healthy and full of vitamins? The only thing you need to have is molds to cool the popsicles in the freezer, you will need the rest blueberries, plain yoghurt and little sugar. Put 125 g of washed blueberries in a saucepan with a spoonful of brown sugar and one of water. Cook until the blueberries have dissolved and the sugar has melted and then blend them with a mixer, to have a homogeneous compound. When they have cooled, add 150 g of plain yoghurt, stir and transfer everything to the popsicle molds. Let cool in the freezer for 6 hours and then enjoy them!

You can prepare a detoxifying juice, blending blueberries with almond milk and with a little of grated ginger.
