Recipe Spelled pancake and plum compote


  • 400 g red plums without stones
  • 250 g more sugar a little
  • 200 g milk
  • 120 g flour 00
  • 120 g spelled flour
  • 30 g rice flour
  • 30 g fine maize flour
  • 20 g butter
  • 8 g baking powder for cakes
  • 2 eggs
  • lemon
  • salt

For the recipe of spelled pancake and plum compote, cut the plums into small pieces and cook them with the sugar and the juice of half a lemon for 15 minutes. Turn off the compote and let it cool. Mix the flour in a bowl, add the eggs, a pinch of salt and one of sugar, milk, melted butter and baking powder.

Mix everything well, obtaining a thick batter. Pour it in spoonfuls into a non-stick pan, obtaining small pancakes, which you will cook for about 1 and a half minutes on each side. So prepare more pancakes until the dough is used up. Serve them with the cold plum compote.

For the recipe for the frying pan of beans and chicory, wash the chicory and break it up. Cut the pecorino into flakes. Blanch the beans in salted water for a couple of minutes. Heat 1 tablespoon of oil in a large pan and cook the chicory for 4-5 minutes, adjusting with salt. Mix the beans and the chicory, spread the pecorino flakes on top and serve.

Put flour, beer, milk, honey and bicarbonate in a bowl.
Stir until obtaining a homogeneous batter, then add the chopped and blended chocolate

Heat a non-stick pan with very little oil and start to cook the pancakes one ladle at a time, over medium-low heat.
When bubbles start to form on the surface and the edges begin to peel off the pan, gently turn the pancake with a spatula and cook the second side.

As they are ready, stack your pancakes with beer on a plate, then decorate them with maple syrup or something else and enjoy!
