Sweet Corn & Wild Mushroom Spoonbread – Best Cornbread Dressing I’ve Ever Accidentally Made!

It’s always nice when you start out making one thing,
and it unexpectedly turns into something else, which ends up being far better
than you expected. Such was the case with this quite homely, yet amazingly
delicious sweet corn and wild mushroom spoonbread.


I was trying to do a simple, wild mushroom-studded,
sweet corn casserole to reinforce our holiday side dish repertoire, and before I
knew it, I was eating the best, most flavorful cornbread dressing I’d ever
tasted. Not only that, but we completely eliminated the step of having to make
corn bread first!

Of course, I wish I could do stuff like this on purpose, but
like my golf buddies used to say, “better lucky, than good.” The only drawback,
as I obsessed over in the video, was the less that stellar appearance when it
came out of the oven. 



I may try some type of gratin topping next time, but
honestly, this was so wonderful tasting that I can’t even pretend to be upset
over such superficial concerns.  I

Ingredients for 12 portions:
1/2 cup dried porcini mushroom pieces, softened in 1 cup hot
tap water, squeezed dry
1 stick (1/2 cup) unsalted butter
3/4 cup all-purpose flour
3/4 cup yellow cornmeal
1/4 cup sugar
1 teaspoon fine salt
1/2 teaspoon baking soda
1/4 tsp freshly ground black pepper
cayenne to taste
2 large eggs
1 cup buttermilk
1/4 cup milk
1 pound sweet corn, drained well
1/4 cup chopped green onions
oil to grease baking dish
Bake at 350 degrees F. for 30-35 min

Three Cheese Zucchini Stuffed Lasagna Rolls

These EASY lasagna rolls are stuffed with zucchini, ricotta and Parmesan, then topped with marinara and mozzarella cheese – delicious, kid friendly and perfect if you want to feed a crowd. You can make them a day ahead and refrigerate, or if you like to cook for the month, these are also freezer-friendly. Double it up, or bring an extra to a friend in need, they’ll thank you! (BTW, they’re vegetarian also, perfect for Meatless Mondays!)

By now I’m sure you figured out I LOVE zucchini! I just shared a roundup of 35 Skinny Zucchini Recipes[1], so here’s number 36! I’ve been craving lasagna rolls lately which I love making instead of traditional lasagna, they are so much easier to make and they’re great for portion control. My girlfriend brought me zucchini from her garden so I thought I’d try out this zucchini version instead of my usual spinach filling[2]. These turned out SO good, and now I have yet another way to eat zucchini.

To freeze, you can choose to individually freeze them in ziplock bags or freeze them as a finished dish ready for the oven.  You can also freeze anything you’ve baked that you can’t finish. Click here for more details on how to freeze lasagna rolls[3].

I served these with sauteed summer julienned vegetables[4] on the side (I used my spiralizer) and it was the perfect meal!

Three Cheese Zucchini Lasagna Rolls

Ingredients:

  • 8 lasagna noodles, cooked (use brown rice lasagna noodles for gluten free)
  • 1 tsp olive oil
  • 3 cloves garlic, crushed
  • 2 medium zucchini (7 oz each), grated and squeezed dry
  • 1 cup + 2 tbsp part skim ricotta cheese (Recommend: Polly-o)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/2 tsp kosher salt
  • fresh cracked pepper
  • 1 3/4 cups Marinara sauce
  • 1/2 cup part skim mozzarella cheese, shredded
  • fresh basil for garnish (optional)

Directions:

Preheat the oven to 350°F. Ladle about 1 cup sauce on the bottom of a 9 x 13-inch baking dish.

In a medium nonstick skillet, sauté garlic and olive oil over medium heat for about 1 minute; add zucchini, salt and pepper to taste and cook about 4-5 minutes, until soft.

In a medium bowl, combine the zucchini, ricotta cheese, Parmesan cheese, egg, salt and pepper in a medium bowl. 

Lay out the lasagna noodles on a clean work surface. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over the noodle. Roll carefully and place seam side down onto the prepared baking dish. Repeat with remaining noodles.

Ladle the remaining sauce over the lasagna rolls and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for about 40 minutes, or until the inside is heated through and the cheese is melted. Top with fresh basil if desired and eat hot.

Mini Baked Frittata with Turkey Sausage, Extra Sharp Cheddar, Tomatoes, and Green Onion

I haven’t had a mini frittata for a while so I decided to make myself one for dinner recently. I found leftover turkey breakfast sausage, extra sharp white cheddar, and green onions in the refrigerator and I also tossed in some sliced grape tomatoes and crushed red pepper flakes. This frittata tasted amazing! I loved the combination of flavors and the turkey sausage gave it such great flavor.

Preheat the oven to 350 degrees.  Coat a mini baking dish with cooking spray.

Mix the eggs with the milk until well combined then season with sea salt and freshly cracked pepper, to taste.  Place a few pieces of turkey sausage, extra sharp cheddar, tomatoes, and green onion into the mini baking dish.

Pour the egg mixture into the baking dish then place the remaining turkey sausage, extra sharp cheddar, tomatoes, and green onion on top.

Place into the oven and bake for 30-35 minutes, or until a tester inserted into the center comes out clean.  Remove from the oven and serve immediately.  Enjoy.

Sea salt and freshly cracked pepper, to taste
Pinch of crushed red pepper flakes
1 link of turkey sausage
1-2 tbsp sharp cheddar, diced

2 grape tomatoes, sliced
1 green onion, chopped

Directions:

Preheat the oven to 350 degrees. Coat a mini baking dish with cooking spray.

Mix the eggs with the milk until well combined then season with sea salt and freshly cracked pepper, to taste. Place a few pieces of turkey sausage, extra sharp cheddar, tomatoes, and green onion into the mini baking dish.

Pour the egg mixture into the baking dish then place the remaining turkey sausage, extra sharp cheddar, tomatoes, and green onion on top.

Place into the oven and bake for 30-35 minutes, or until a tester inserted into the center comes out clean. Remove from the oven and serve immediately. Enjoy.
