17 good resolutions for the new year? FAO tells us. Once the Christmas holidays are over, it is the ideal time to reflect on our behaviors and habits, aiming to make 2024 more sustainable and inclusive. And this also means contributing to the realization of the Sustainable Development Goals (SDGs) with the aim of building a better future for all.

There sustainability, understood in a broad sense, embraces the need to ensure decent work, equal opportunities, health, education and a vibrant quality of life. Therefore, let us begin the new year with the aim of cultivating positive change in various aspects of our lives.

Putting others first (SDG 1)

Let’s volunteer at local kitchens or homeless shelters. In this way we contribute to combating extreme poverty and ensure that no one feels excluded or forgotten.

The legend of tortellino told by the rezdore- La Cucina Italiana – Italian Cuisine


Who invented the tortellini? We are told by the Emilian rezdore, among the protagonists of the special July issue of La Cucina Italiana. You can find them on page 42, service "The navel of the world" by Sara Tieni

A few words can fully tell the magic and tradition contained in the tortellini. For this reason, we thought of doing it through the voice of those who still contribute to making them a symbol of love, family and above all goodness. Who better than the rezdore of Castelfranco Emilia can you reveal the secrets and the legend of the tortellino?

The rezdore – as they say in the Emilian dialect – they are the "rulers" of the house, those who in the past supported the head of the family and managed all aspects of family life within the home. Among the responsibilities, there was certainly no lack of preparing the perfect pastry for tortellini.

We had the pleasure of meeting some wonderful rezdores at the voluntary association San Nicola, in Malvasia Castle in Panzano. To tell us the legend of the tortellino was Graziella, 75 years old (in the photo below you can see her together with her granddaughter Valentina, 21 years old, ready to receive the teachings of her grandmother).

The legend of the tortellino

Bologna is Modena they have always claimed the paternity of the tortellino, but Graziella has no doubts. The tortellino was born in Castelfranco Emilia: a slightly drunk host had the good fortune to host a splendid woman in his inn (according to one version of the legend, it was Venus himself) and, peering through the lock of the room, he was shocked by its beauty. His navel was particularly striking, so much that he decided to reproduce it with fresh pasta

For a special dinner, when you want to amaze your friends with a tasty and original first, let yourself be inspired by the #storiedipomodoro with the Salse Mutti.

In the kitchen creativity can not be lacking, the great chefs say it and we all think so. But it is not always easy to imagine new combinations, choose the right ingredients, remove the temptation to try the usual, tested recipes. "Battle Horses" we love to call them, but the truth is that often we do not have the inspiration to dare something different.

Yet, even when time does not seem to play in our favor and imagination is scarce, with a few simple ingredients and an ace up your sleeve (we should always have one!) you can bring delicious dishes to the table. The result? A recipe that will surprise everyone! Our word.

Tagliatelle with swordfish, pine nuts, aubergines and Datterini Mutti sauce

For 4 people

Ingredients

320 gr of tagliatelle
250 gr of swordfish
1 bottle of MUTTI Salsa Datterini
1 large aubergine
a generous handful of pine nuts
a mint tuft
extra virgin olive oil q.b.
Salt and Pepper To Taste.

Method

Cut the aubergine into small cubes and fry them in a non-stick frying pan with extra-virgin olive oil.
Separately, toast the pine nuts in a non-stick pan.

Cut the swordfish into small cubes, sauté it quickly with a drop of oil in a non-stick pan with a pinch of salt, pepper and chopped mint.
Meanwhile, cook the tagliatelle in a steel pot keeping them al dente.

Pour the MUTTI Datterini Sauce into the pan containing the pan-fried swordfish cubes and leave to flavor for about 5 minutes.

With the sauce prepared, season the tagliatelle and serve, adding the toasted pine nuts and fresh mint to complete the dish.

That sweet taste that was missing from your recipe

Today's story has as its protagonist the recipe of the Tagliatelle with swordfish, a great classic that we wanted to enrich with new ingredients for an original and successful result.

Here then we have chosen to combine with swordfish a lightly seasoned tomato base, simple but above all very tasty and practical (and in the kitchen, a bit 'of practicality is always welcome): the Salsa Datterini Mutti, which is characterized by its sweet taste, because it is made with datterino tomatoes, extremely tasty, sweet and pulpy, and a few other simple ingredients such as extra-virgin olive oil, salt, shallot, celery, basil.

The Datterini Mutti sauce is perfect to flavor, in a matter of minutes, the swordfish cubes and to give the recipe a sweet and savory taste.
Finally, to give the dish freshness and crunchiness, we have toasted a handful of pine nuts and added a little bit of mint during the serving.
