Roasted Strawberry Protein Smoothie and a Vitamix Giveaway

Roasting strawberries in this smoothie brings out their amazing natural flavor in this creamy, protein packed smoothie – what a great way to start the day!

I discovered a new way to add protein to my smoothies… cottage cheese! This is a great discovery for me because I’m not a fan of the tang of yogurt in my smoothies. Cottage cheese makes it creamy with no tang, and has more protein than yogurt so it’s perfect! I also love adding chia seeds to my smoothies which is an excellent source of fiber and omega-3’s which is available at Target[1].

I’m sooo excited to review my new Vitamix blender[2] for the first time. Wow, what power this blender has. And guess what… it’s now available at Target[3]! And Target[4] is giving one away to a lucky winner!! All you have to do is leave a comment here and share your favorite smoothie recipe along with a way I can reach you if you win (email, twitter, Instagram). That’s it, easy!! Good luck!!

RULES:  Giveaway is provided by Target and the Target Inner Circle and will run
until Monday morning, March 31, 2014 open to all U.S. residents 18 years
and older. A winner will be chosen at random using Random.org. Chosen

or another shall be chosen. Good luck!

Valentine’s Day Cake Balls

Happy Valentine’s Day! My daughter is having a Valentine’s Day party in school today, so I just wanted to share these cake pops adapted from my skinny cake pop recipe[1] I did a few months back to bring to her class.

I love how you can come up with hundreds of different ideas with this Nordic Ware Cake Pop Pan[2] I purchased at Target. I highly recommend buying 2 pans if you plan on making these to speed this up.

I simply took my recipe and used colored candy melts in place of the white, with heart sprinkles. So cute!

Sodium:

Ingredients:

  • 16.5 oz package yellow cake mix(or flavor of your choice)
  • 6 oz plain fat-free Greek yogurt (Chobani)
  • 1 cup water
  • 2 large egg whites
  • 1 tsp vanilla extract
  • baking spray
  • 48 oz Wilton colored candy melts (20 oz used total, calculated in n.i)*
  • sprinkles
  • mini cupcake liners

Directions:

Preheat oven to 350°F. Lightly spray a the cake pop pan with baking spray.

Combine all the cake ingredients in a large mixing bowl and beat until combined. Place the batter into a pastry bag or large ziplock bag with the tip cut off.

Pipe the batter into the prepared cake pop pan and bake about 18
minutes (I rotated the pan after 10 minutes to be sure they baked
evenly). Let it rest 5 minutes before opening the pan.

Place cake balls on a wire rack and repeat with remaining batter. Using a scissor, cut the seam off the balls.

Refrigerate the cake balls for about 45 minutes, this helps the chocolate stick to the cake.

Melt some of the white chocolate melts in the microwave according to package directions, careful not to burn the chocolate. Insert the tip of the stick into the melted chocolate, then into the cake ball (this helps hold the stick in place).

In batches, melt remaining chocolate. Dip the cake
pops into the chocolate, let the excess drip off then place into the cupcake liners. Top with sprinkles and drizzle with chocolate if desired.

Makes 48-50 balls.

*I weighed the chocolate on each ball to calculate the nutritional
info. Although the recipe calls for 48 oz of chocolate, not all of it
will be used, but you will still need to buy extra so you have enough to
coat the cake balls. I calculated 0.4 oz of chocolate on each cake
ball.

Grilled Thai Sweet and Spicy Shrimp Pizza

Move over hot dogs, this sweet and spicy shrimp grilled pizza made with my Bangin’ Good Shrimp [1]recipe is so good!

I’ve had my eye on Archer Farms thin crust pizza crust for a while and thought it would be perfect to make on the grill, so when Target’s A Bullseye View[2] asked me to create a guest post for their blog, I knew exactly what I wanted to make.

Being part of the Target Inner Circle[3] I get to attend some really fun events. A few weeks ago Target set up a life sized dollhouse in the middle of Grand Central Station decorated with their Threshold home collection, how COOL is that??!

It was incredible to see this giant dollhouse in the middle of one of the busiest places in NYC!

My favorite part was their outdoor area, especially their ottomans and tables. When I went to Target to pick up all the ingredients for this pizza, I found this adorable bistro table on sale for $199 and picked up some Threshold lanterns, pillows and ottomans… LOVE!!

These ottomans make the backyard feel like an extended part of my home. But more about the pizza, for 8 servings it’s just under 300, or 8 weight watchers points plus each. If you want to try this yummy pizza recipe, head on over to A Bullseye View for the full recipe[4].
