The most creative recipe

By 31 December 2020, the editorial staff of La Cucina Italiana chooses the most creative post or the one with the most original or delicious recipe. But it doesn't stop there.

The author is invited to perform his recipe in the kitchen of the Pastificio Rana in Verona, with a photographer documenting the preparation: the dish and the cook thus become the protagonists of an advertorial article in the February 2021 issue of La Cucina Italiana.

This year, however – we know it well – is a bit different than usual, and projects often have to adapt to the limitations caused by the Covid-19 pandemic. If it is not possible to take the shots in Giovanni Rana's headquarters, the editorial staff of La Cucina Italiana will interpret the best recipe, and an interview with the author and his photo will be included in the dedicated advertorial.

Our recipe: Fried ravioli sandwich filled with stracciatella ice cream, with melted dark chocolate and decorated

INGREDIENTS
1 pack of ravioli with Rana chocolate
100 g of stracciatella ice cream
150 g of gianduia chocolate
2 tablespoons of colored sugar
Peanut oil

An alternative to ice cream: ricotta and chocolate cream
250 g of ricotta
100 g spreadable cheese
30 g of powdered sugar
50 g of chopped dark chocolate

PREPARATION
Fry the ravioli in plenty of peanut oil at 180 ° C for 1 minute, until the surface is crisp. Drain them on kitchen paper to remove excess oil.
Melt 150 g of gianduia chocolate in the microwave or in a double boiler, being careful not to let it burn.
Place a scoop of ice cream between two warm ravioli, lightly squeeze the two ravioli together to make the ice cream adhere. Dip the bottom of the sandwich in the gianduia and sprinkle with colored balls.
As an alternative to ice cream you can fill the sandwich with a stracciatella ricotta cream. In a container mix the ricotta with the sugar, add the cream cheese and chopped chocolate with a knife. Stuff as above, placing a scoop of cream between two ravioli and dipping it in the melted gianduia. Sandwiches should be eaten freshly made.

The Futurist genesis

If LA Caprese is famous all over the world and is among the most famous dishes of the Italian summer, there is also a sandwich version. But it is not a fast food invention of the Third Millennium, it is part of the island's history at least when the "dish" version. The ingredients are the same: tomato, mozzarella, a drizzle of extra virgin olive oil, a pinch of salt and basil leaves. The salad version owes its origins to Filippo Tommaso Marinetti, futurist and gourmet in search of revolutionary dishes: strictly pasta-free, traditionalist because heavy to digest. In Capri, a "cheese and tomato" salad was already eaten, but during a gala evening at Grand Hotel Quisisana in 1922, Marinetti had the patriotic recipe served – where it is still in the paper.

Where to eat it: the chef's advice

The Capri chef doc Luigi Lionetti, of the starred restaurant Le Monzù of the Hotel Punta Tragara – the most luxurious on the island – has no doubts: "The delicatessen down by the port". Is called Aldo's delicatessen, the surname is Cuccurullo, and to recognize it just look in front of the ferry dock in Marina Grande: has the yellow curtain and the row outside. Inside is an ordinary delicatessen, which still sounds special in Capri, with a nice fridge with beers from 66 to 2 € (and drinks ready to be taken to the beach) and a delicatessen counter where mozzarella and salami dominate. There are those who have raw ham added, others cooked, some eggplants in oil: everything is weighed at the moment. Then they write the price on your slip of paper and you go to the cash desk (two meters away) where Aldo's wife prepares the receipt. And for € 5 including a drink, you can take a bite at one of the Capri institutions. Where to eat it? On the beach or, better still, as an aperitif at sunset along the promenade of via Grotta Azzurra, Punta del Miglio or Forte Mesola. Capri will not be a low-cost destination, but it offers absolutely democratic corners of poetry.

The Dafne Garden Cafè is the delightful bar open to the public of a boutique hotel named Apollo, which is in Rome in Prati area, a stone's throw from Lepanto. Inaugurated in full lockdown, it can be said that they have already suffered the torture of the vengeful God and that now their love can rather sail towards a happy ending. Meanwhile, the evil Cupid who fires gold and lead arrows seems to have kept the latter in the quiver. Everyone fell in love with this corner of the Prati district, where a small terrace nestled between ministerial buildings has become a small urban jungle.

Accomplice of falling in love, Federico Cari, a pastry chef temporarily lent mostly to savory, who has developed Dafne's menu, from breakfast to aperitif. It is for the lunch appointment that Daphne expresses herself best at the moment, with perfect delicacies for a lunch break more or less light, depending on the delicacy. Federico Cari has in fact created a menu of gourmet sandwiches and more, which includes the Club Sandwich in two versions. The first is the one that follows tradition, the second is his idea that caused a sensation: the Veg Club, layered sandwich like the carnivorous brother, but in a vegetarian version, played on contrasts of color and flavor, between zucchini, tomatoes and aubergines.

He gave us the recipe to try to create magic at home. But the advice is to try the original first.

Vegetarian Club Sandwich: recipe for 2 Veg Club

Ingredients

3 large slices of wholemeal sandwich bread
3 organic dark skinned eggplants (not too big)
6 organic courgettes
½ red onion
2 organic "ribbed" unripe tomatoes (the classic sandwich tomato)
Classic (or slightly mustard) mayonnaise
Fresh basil
Fresh thyme
Fresh chives
Fresh mint
Extra virgin olive oil

Method

(the preparations can also be made well in advance and kept in the fridge)

For the courgette cream:

Use 3 courgettes for this preparation. Cut the courgettes eliminating part of the white inside, slice them thin. In a pan put the julienne sliced ​​onion, extra virgin olive oil and fry gently, add the zucchini and sauté until they are tender, but not overcooked. Immediately blend the courgettes with three basil leaves when hot, possibly adding a little water to make the cream very smooth. Allow to cool to room temperature.

For the baked vegetables:

Preheat the oven to 180 ° C in ventilated mode. Prepare two trays lined with parchment paper, cut the aubergines into slices about ½ cm thick or a little more, spread them in the pan and season with oil and salt. Cut the courgettes into thick slices lengthwise, spread them out in the pan and season with oil and salt. Bake for 20 minutes, lightly browning both vegetables. Leave them to cool at room temperature.

Preparation of the "Veg" Club

Toast the slices of wholemeal bread on both sides and set aside. Slice the tomatoes to a thickness of about ½ centimeter and lightly dab them with excess water with the help of a kitchen cloth or absorbent paper. Spread all three slices of sandwich bread with a little mayonnaise and then with plenty of zucchini cream: one of these slices will be the cover of the Club Veg then keep it aside because it will only serve at the end. Arrange four slices of tomato on each of the two slices of bread, cover with the baked aubergines and then with the zucchini spread horizontally, overlapping them slightly to create a compact and uniform layer. Sprinkle each slice with the mix of fresh herbs cut into julienne or coarsely chopped. Place a few more courgette cream flakes to finish. Overlap the two layers one on top of the other (as if it were a multi-storey cake!) And close with the slice of bread that is left aside. Lightly squeeze this "turret" with the palm of your hand, remove the external crust of the sandwich bread using a well-sharp serrated bread knife and then cut the Club into two large rectangles. Toast the sandwich again for a few moments before serving. At will, complete each slice of Club Veg with a little cream of courgettes and other aromatic herbs.
