How much these French love us! – Italian Cuisine


Once again the French show a great love for Italy (football aside).
It is since Caterina de 'Medici brought the forks (and a bit of civilization) to the table at the court of her husband Henry II, that we have looked at ourselves a little like this, but love remains. And how. Self Yannick Alléno, multi-starred chef from Pavillon Ledoyen, the three-star restaurant in Paris, has been spotted in Forte dei Marmi, numerous bottles of Dom Perignon these days a Capri. The two versions are memorable with burrata and shrimp carpaccio with lemon zest and the other, with egg, caviar and gold leaf.

And while the wine expressed all the delicious freshness and a perfect balance between generosity and acidity (good at Vincent Chaperon, the maison's chef de cave), the idea that bubbles and pizza are a perfect combination consolidated. In addition to a riot of babas served at the end of dinner.

Another unequivocal sign of love France versus Italy is the new one Dior pop up store at the Riccio Restaurant & Beach Club of Capri Palace Jumeirah, the only Michelin star in the world given a seaside club. Among spaghetti with sea urchins and raw fish, you can admire the ad hoc Dior J’adior Capri collection, bags, costumes to be worn in the cabins furnished in the style of the maison.

The editorial of the new special issue of La Cucina Italiana, on newsstands from August 5: this month Davide Oldani will guide us on our incredible journey to UNESCO

I remember well an interview with Davide Oldani years ago, when I worked in another company magazine (Vanity Fair). He spoke to me about the bike, about the passion for cycling. But beyond the sport, which Davide practices constantly (and you can see it) and of which he has made a lifestyle, he told me about the discipline, the resistance that it takes to pedal along a steep slope with the forehead that is imposing sweat and the soul concentrated in the effort, the muscles frying, the heart beating fast. As the panorama moves around. An individual sport that requires careful team play to win. A metaphor for a tough day in the kitchen where you stand for hours, where you put your heart and soul into what you do because you believe in it and where you always resist, from morning to evening until late at night. And the great driving force of all this is always and only passion. The passion that this boy from San Pietro all’Olmo, a village on the outskirts of Milan, has put into becoming the great chef he is, the passion that we are all taking to get to nominate Italian cuisine as a UNESCO intangible asset. The passion that you put when you light the fires in your home kitchen and start the tasty dances. Here it is. If the bike is like the kitchen, I want to continue pedaling.

Varying is important

Self skipping breakfast is a big mistake, to eat always the same things as soon as you wake up it's just as wrong.
Variety at the table is everything, not only to not get bored, but also to help ours metabolism to be a little more active.
And then, instead of the classic milk and cerali or the rusks with jam, try to introduce occasionally in the morning ricotta or cream cheese to combine with sweet ingredients such as fresh or dried fruit or something salty such as cold cuts and vegetables.
