Peanut and raspberry tart, preparation

1) Gather the peanuts in a blender and
blend them for a long time until you get a smooth and homogeneous paste. United the egg, beaten separately, with a pinch of salt and sugar e blend again until the mixture is amalgamated.

2) Transfer the mixture into a smooth 20 cm diameter mold lined with baking paper and level it until a uniform layer is obtained. Cook the base in the oven at 180 degrees for about 15 minutes. Let it cool and transfer it without paper on the serving plate.

3) Jumbled up the raspberry jam to soften it e spread it evenly on the prepared base. Complete with the remaining raspberries and peanuts, chopped, e served the cake with the whipped cream with a pair of electric whisk.

From 21 to 27 September in Milan you can also eat fashion: Gusto17, the Milanese artisan ice cream parlor included by Forbes among the 100 Italian excellences 2021, launches a limited edition ice cream stick to celebrate Giorgio Armani and the 40 years of Emporio.

The shades between gray and beige meet in the iconic color that has always distinguished the Armani style. Greige is created in a completely natural way with ingredients that represent Italian excellence: the filling is a Sicilian salted Pistachio ice cream, while the topping is of fine white chocolate processed with vegetable carbon powder derived from coconut.

The bi-color stick, available in three different combinations of greige nuances, joins the Pantone-inspired Design Sticks. These will be enriched over time with new products to form a Special Edition of Stecchi Gelato, all made in line with the philosophy of Gusto 17, i.e. only natural and seasonal ingredients, no artificial dyes, preservatives or thickeners.

You can taste Greige at Milan, for the entire duration of the Fashion Week (21-27 September 2021), in the stores in Milan of Gusto 17 in via Savona 17 (Tortona District), in via Cagnola 10 (Arco della Pace), in the Rinascente Duomo in the Food at the 7th piano, from VOCE Aimo and Nadia in p.za della Scala, but also throughout Italy ordering it on e-commerce.

1) Butter and floured 3 molds of 20 cm in diameter. Mounted the whole eggs with the granulated sugar, until the mixture is very soft and light. Incorporate the sifted flour, a little at a time, stirring with a spatula with gentle movements from the bottom up.

2) Pour the mixture into the prepared molds and bake in a preheated oven at 180 degrees for 25 minutes. Leave cool a few minutes out of the oven, then unmolded and overturned the disks of sponge cake on a wire rack to cool.

3) Blend 100 g of berries with 1 tablespoon of powdered sugar and 2 of water. In a bowl, whip the cream with the mascarpone and 1 tablespoon of powdered sugar.

4) Tease the top of the first sponge cake disc, sinking of 1 cm the prongs of a fork. Get it wet with the berry sauce, cover with 1/3 of the mascarpone cream and complete with 1/3 of the remaining whole fruit.

5) Tease the second disc of sponge cake, wet it with the sauce and place it on the first one, holding under the soaked side. Pecked and wet also the top side e cover with cream and whole fruits.

6) Do the same with the third disc e finished decorating with small flowers and strawberry leaves e dusting with the remaining icing sugar.
