The recipe for rice cakes and amaretto ice cream is our reinterpretation of the rice cake typical of Emilian cuisine, a dessert that is not too sweet, simple, but substantial. The recipe has peasant origins and its diffusion in Emily it happened thanks to weedersthe women who went to collect the rice in the areas of Vercelli, which were often paid with part of the harvest.

In this preparation, we served a ice creammacaroon to accompany a mignon version of the cake that we enriched with almonds and cedar.

Here’s a version of the cheesecake super delicious, with a chocolate base and a variegated yogurt and caramel cream. Just looking at it in the photo makes you want to dig in, doesn’t it?

Making it requires several steps but it will be worth it to obtain a mouth-watering dessert! The base is made up of Cacao Biscuits, nuts, corn flakes held together by milk chocolate melted and left to harden in the fridge; there will be two creams to make – one with caramelcream and cheese, the other with Greek yogurt and icing sugar – which will then be mixed to obtain the variegated effect.

Step 1

Whip the butter with the icing sugar, flavored with the seeds of half a vanilla pod and a pinch of salt, until it is very foamy and white.

Step 2

Add the egg yolks, continuing to whisk, then incorporate the flour.

Step 3

Chop the almonds and add them to the dough.

Step 4

Whip the egg whites until stiff, then gently fold them into the mixture.

Step 5

Butter and flour a ring mold (ø 22-24 cm) and pour the mixture into it. Bake it at 170°C for about 40 minutes. Remove from the oven, remove from the mold and leave to cool.

Step 6

Cut the cake in half horizontally and fill it with the jam. Accompany it, if desired, with whipped cream.
