Recipe Bass marinated in lime


  • 200 g sea bass fillets suitable for raw consumption
  • 80 g mixed salad
  • 25 g red sweet pepper
  • 15 g red onion
  • garlic
  • 15 g spicy green pepper
  • 20 pcs cherries
  • misticanza
  • 4 pcs files
  • salt
  • pepper
  • extra virgin olive oil

For the recipe of lime marinated sea bass, free the sea bass fillets from the thorns and peel them; cut them into slices and collect them in a bowl. Season with the rind of 1/2 lime and the juice of 3 files. Add the finely chopped green pepper and onion and the red pepper cut into strips, salt, pepper and 1 clove of peeled garlic (which you will then remove). Add to the marinade also 12 cherry pieces: since they color the fish, you can choose to add them all at the end. Cover with plastic wrap and marinate in the fridge for 2-3 hours, stirring occasionally. Drain the sea bass from the marinade and serve with the mixed salad, seasoned with a little oil, salt and pepper, the remaining cherries cut in half (and possibly the minced ones). Complete with a drizzle of oil and grated lime zest.

Recipe Potato balls with lime sauce


  • 650 g spinach leaves
  • 600 g white-paste potatoes
  • 80 g breadcrumbs
  • 60 g pistachio flour
  • 2 pcs eggs
  • 1 pcs shallots
  • half lime
  • wasabi paste
  • seed oil
  • extra virgin olive oil
  • fine salt and flakes

For the recipe of potato balls with lime sauce, boil the whole potatoes with the peel for about 35 minutes; peel them, mash them and mix them with the breadcrumbs, 1 egg and a pinch of salt. Chop the shallot and brown it in a pan with 2 tablespoons of extra virgin olive oil for a couple of minutes; add the chopped spinach and cook for 7-8 minutes; Drain them from the cooking water, let them cool and mix them with the potato mixture, keeping aside 20. Mold the mixture into round meatballs of 15 g each: you will get about fifty. Pass them in the pistachio flour and fry them in abundant hot oil for about 1 minute and 30 seconds; drain them on kitchen paper. Prepare a sauce by blending the spinach kept aside with  egg, a pinch of salt, the juice of half a lime and 1 teaspoon of wasabi paste, adding 130 g of seed oil. Season the meatballs with salt flakes and serve with the sauce.

Recipe Eggs in a nest of agretti with lime


  • 300 g clean agretti
  • 4 pcs very fresh eggs
  • White wine vinegar
  • black and white sesame
  • lime
  • salt
  • extra virgin olive oil

For the recipe of eggs in a nest of lime with broth, bring to the boil a large pot of water with 4 tablespoons of vinegar (you will need it to cook the eggs). Boil the agretti in a pan of boiling salted water for 3-4 minutes. Carefully break an egg into a small bowl. Use cold eggs from the fridge. Lower the flame under the pot and create a vortex by mixing with a spoon; pour an egg in the middle making it slip from the bowl; keep stirring very gently to allow the album to wrap around the yolk. After a few seconds, without removing the first egg, repeat the same operations with the other eggs and cook them together for 3 minutes. The water will only have to quiver, without ever boiling. Season the agretti with a drizzle of oil and a pinch of salt, arrange them on the plates forming small nests, and place a poached egg in the center. Complete with sesame seeds, a few sprigs and grated rind of lime.
