  • 350 g Carnaroli rice
  • 120 g courgette (green part only)
  • 120 g baby spinach
  • half onion

  • extra virgin olive oil

For the recipe of green risotto with fresh herbs, blanch the zucchini and spinach in boiling salted water for a few seconds. Drain and blend them with 30 g of oil and 1 ladle of broth, obtaining a bright green cream.
Chop 1/2 onion and brown it in a saucepan with a little oil, for 2 minutes. Add the rice, toast it briefly, sprinkle with a splash of white wine, then wet it with 2 ladles of broth. Then bring it to cooking, adding broth a little at a time, in about 15 minutes.
Cream it with 40 g of butter, 40 g of grated parmesan and green cream. Serve the rice completing it with rocket leaves, chicory and black cabbage
in strips, basil and mint.

  • 150 g of veal pulp
  • 40 g white celery
  • 2 teaspoons of extra virgin olive oil
  • a teaspoon of balsamic vinegar

To prepare the veal roast with herbs, add the roast veal and brown it in a teaspoon of previously heated oil with a pinch of salt. Cook on a high heat for 15 minutes, turning the meat often. In the meantime, chop all the herbs, mix them with a teaspoon of oil, one of balsamic vinegar, add salt and pepper, then dilute everything with a little water. Thinly slice the roast and serve with the sauce and the chopped celery. This dish can be served hot or cold.

  • 1 kg chicken
  • 125 g whole yogurt
  • 100 g fresh goat cheese

For the recipe of chicken with herbs, divide the chicken in half, cutting it along the spine, remove it, and open it as a book. Heat a few cloves of crushed garlic with the peel, 2 sprigs of rosemary, a pinch of salt, a few tarragon leaves, lemon balm, piglet in a pan that can go into the oven with a knob of butter and 2 tablespoons of oil.
Salt the chicken and season with a teaspoon of paprika on the skin side, then add it to the hot herbs. Brown it on the side of the skin for 3-4 minutes, placing a weight on it to keep it well crushed. Turn it over and cook it for another 2 minutes, then place it in the oven at 200 ° C for 30-35 minutes.
Blend the yogurt with fresh goat's cheese, a pinch of salt, a teaspoon of oil and a little pepper. Serve this creamy sauce with the chicken.
