Cauliflower Pizza Crust – Don’t Let the Name Fool You

The major problem with this cauliflower pizza crust is that there’s already something called pizza. If you’d never heard about pizza before, and someone served this to you, I think you’d really enjoy it. 

Unfortunately, we’ve all had pizza before, and so this will invariably be compared to the awesomeness of the real thing. You know, sort of like what happens to deep-dish, Chicago-style pizza (said the New Yorker).


Regardless, this was very tasty, pleasantly textured, and contains almost no carbs – in case you’re into one of those alternative lifestyles. For the cheese, I decided on goat after seeing this recipe on Detoxinista. All kinds of cheeses are used for this technique, usually mozzarella and something else, but I figured the tart chèvre would best simulate the fermented dough of a classic pizza.


Texture aside, the flavor of this final product was very pizza-like, and I’ll be doing further experiments to be sure. By the way, if you have a version that’s clearly superior to this one, feel free to share. Otherwise, I hope you give this cauliflower crust pizza a try soon. Enjoy!


Ingredients for one 10-inch pizza crust:
1 head cauliflower (about 3 packed cups ground)
1/2 cup water
– Cook cauliflower with water for 5-6 minutes, let cool, and squeeze out ALL water with a towel. You should have about 1 1/2 cups of dry cauliflower pulp left.
1/2 tsp salt
1/2 ounce finely grated Parmigiano-Reggiano (about a 1-1/2 inch square grated)
2 ounces fresh goat cheese
cayenne to taste
1 large egg

Today it really feels like Spring here on the East Coast. Temperatures are supposed to get into the eighties, which is quite a change from the snow we had two weeks ago! I’ve been on a salad kick big time, and even started a Pinterest board[1] dedicated to salads called “Bikini Ready Salads”[2] because summer will be here before you know it.

This delicious salad is perfect for this time of year or throughout the summer. Mixed organic baby greens such as baby kale and baby spinach (side bar, I am looooving Organic Girl’s I heart baby kale mix), are tossed with sliced strawberries, slivered almonds and crumbled Gorgonzola cheese. The dressing is a simple vinaigrette with honey, poppy seeds and shallots.  This makes a wonderful light lunch or a perfect side salad to serve it with grilled chicken.

I love fruit in my salads, especially when combined with the
texture of nuts such as almonds and a soft cheese such as Gorgonzola.
The sweetness of the strawberries compliments the cheese, and the poppy
seed dressing ties it all together. This recipe was first posted back in
2008, before I owned a decent camera and the photo was so embarrassing,
I decided to let it shine and give it a photo makeover.

You can swap the almonds for any nut you like, such as walnuts or pecans and the cheese can be swapped with goat cheese. For Paleo diets, leave out the cheese and use raw honey in the dressing.

Ingredients:

For the dressing:

  • 1 tbsp red wine vinegar
  • 1 tbsp cider vinegar
  • 2 tbsp olive oil
  • 1 tsp minced shallots
  • 1 1/2 tbsp honey (raw for Paleo)
  • 1/2 tbsp poppy seeds

For the salad:

  • 5 oz organic mixed baby greens
  • 1/4 cup slivered almond
  • 2 cups sliced strawberries
  • 1/4 cup gorgonzola (leave out for Paleo)

Directions:

Place all the dressing ingredients in a small jar and shake.

Combine the salad ingredients in a big salad bowl and toss with dressing or you can divide the ingredients equally between four plates.

Fresh Fig and Arugula Salad with Goat Cheese

Fresh sweet figs with soft goat cheese over baby arugula topped with a balsamic glaze. A beautiful salad without the fuss, using only 5 ingredients; this salad will make you look like a rock star in the kitchen! 

Once revered as a symbol of peace and prosperity, figs are beloved today for their unique flavor and texture. Not to mention, they offer some health perks, too: Figs contain some potassium and vitamin A.

Balsamic glaze is my favorite new find, it’s thick and sweet and you can drizzle it on salad,
sandwiches or even strawberries. I bought mine in Trader Joe’s but I see
it in stores everywhere now. It’s pairs perfectly with figs, and you only need to drizzle
a little olive oil on top.

You can serve this
salad on a large platter with olive oil and balsamic on the side, or you
can serve them on plates, one fig per person.

If goat cheese isn’t your thing, gorgonzola would make a perfect replacement. You could even add slivered almonds or walnuts.

  • 8 cups baby arugula
  • 8 fresh figs, washed and quartered
  • 1.75 oz semi-soft goat cheese
  • 1/2 cup balsamic glaze 
  • 4 tsp extra virgin oil

Directions:

Arrange arugula on a salad bowl or platter, or you can divide on 8 salad plates.

Top with quartered figs and goat cheese and serve with balsamic glaze and olive oil on the side.

Serving size: 1 cup arugula w/ cheese, 1 fig, 1 tbsp balsamic glaze, 1/2 tsp extra virgin olive oil.
