We invited five children between seven and ten years old to a haute cuisine restaurant. Here's what happened

What happens when five children try haute cuisine for the first time? We discovered it together with Beatrice, Benjamin, Edoardo, Elvira is Tilde at the restaurant Contraste, opened in Milan in 2015 and awarded a Michelin star in 2017.

To welcome the children there were the room manager Thomas, the waiter Giulio and finally the chef Matias Perdomo, who sat at the table to discover their opinions on the five courses tasted. Scallop noodles, parmesan and dashi, Spaghetti with clams, Donut alla bolognese, Pluma from Iberian pork, hedgehogs and burrata, and finally the sweet Pulp Fiction, inspired by the Quentin Tarantino film.

Let's use them in the kitchen

To make them crispy and enhance their flavor, they can be toasted for a few minutes in a non-stick pan or in the oven, at a temperature not exceeding 160 ° C. On the market they are often also already toasted and salted, but in order not to frustrate their many benefits the advice is to buy them naturally and then toast them.

Not easy to find, it is always better to choose seeds from organic farming, to be certain that the flowers from which they were derived have not been treated by the use of pesticides.

  • 750 g fresh tonnarelli pasta (spaghetti alla chitarra)
  • 165 g grated Pecorino Romano Dop
  • 100 g butter
  • 30 g black peppercorns
  • salt

For the recipe of tonnarelli cacio e pepe, bring a large saucepan of salted water to the boil, filling it less than normal (to concentrate the amount of starch); dip the pasta and stir frequently. Drain al dente, preserving the cooking water. Meanwhile, collect the butter and pepper, ground, in a large pan over high heat. Stir for a couple of minutes. Dilute then with 300 g of cooking water, bring to the boil and stir from time to time, for another 3 minutes.
Then add the pasta and another 300 g of its cooking water, raise the heat and stir vigorously (to extract the starch) until the sauce thickens (it will take about 5 minutes). Remove the pan from the heat and add 200 g of pasta cooking water. Add the pecorino and sauté vigorously until the dressing is very creamy (if necessary, add more water). Serve immediately, adding more pecorino as desired.
