Matcha Green Tea Shots

These healthy energy shots give you a BLAST of antioxidants, the perfect afternoon pick-me-up for a healthy Happy Hour!

I’m in love with Matcha[1], not just because of the antioxidants, or because it has two amino acids (theophylline and L-theanine) which have both an energizing and calming effect (which explains why Buddhist monks have been drinking Matcha for centuries!)

I really just love the taste of Matcha[2], more than I enjoy drinking a regular cup of green tea. Because it’s a fine powder form of the tea leaf, it quickly dissolves in anything you put it in, hot or cold, so if I want to drink it cold, I just mix it in – no heating required!

This is so easy, and takes just 1 minute to make. I combine sweetened vanilla Almond Breeze[3] almond milk and Matcha powder – then shake, shake, shake! That’s it! You could even use unsweetened almond milk and a few drops of stevia.

For a quick afternoon pick me up, rather than reaching for a cup of coffee (which I prefer to drink in the mornings) I go for Matcha instead. It’s the perfect pick me up without the jitters.

Skinny Pumpkin Overnight Oats in a Jar

Pumpkin spiced overnight oats with pumpkin butter, banana, chia and spice in a jar (no cooking required!) I know what I’ll be eating for breakfast every morning for the next few weeks.

I’ve been eating overnight oats in a jar[1] all summer, it’s perfect to make the night before and eat on a busy weekday or even to bring to work. A few weeks ago someone emailed me about making a pumpkin version which I thought would be perfect for the Fall.

This weekend I whipped up a half batch up pumpkin butter[2] (aka- pumpkin heaven on a spoon) and I stirred it into my oats along with chia, bananas and pepitas (pumpkin seeds) and it was delightful! If you like your oats a little sweeter, you add a few drops of stevia, honey or maple, but for me it was just right.

Pumpkin season’s back which prompted me to create a Pinterest board called Pumpkin Madness[3] for all my pumpkin recipes. If you’re pumpkin obsessed, you’ll want to follow this board[4]! I also have them all in the recipe index, which you can see here[5].

Amazing Flour-less Brownies

Moist, chocolatey and delicious – finally a low-fat, gluten-free brownie that’s pretty darn good!

I can’t get over how good these brownies taste considering they’re made with no flour and no butter. Yet they’re not cakie or dry like most low fat brownies I’ve tried. I found the original recipe last year on the Roasted Root[1], which I adapted and have made many times since.

The secret ingredient is black beans, and I’m sure you’re thinking… what? But trust me, you don’t taste it! My husband even loves them, and can’t get over how good they are (and trust me if he didn’t like it he would tell me). They really feel like you’re eating something loaded with butter, yet it only uses 1/2 teaspoon of oil.  The last version I added some walnuts which increased the points to 5 each, but I gave you the basic recipe without.

Calories: 144 • Fat: 5 g • Carb: 26 g • Fiber: 3 g • Protein: 4 g • Sugar: 17.5 g
Sodium: 150 mg • Cholesterol: 23 g

Ingredients:

  • 1 (14 oz) canned low-sodium black beans, rinsed and drained
  • 2 large eggs
  • 1/2 cup cocoa powder
  • 3/4 cup sugar
  • 1/2 teaspoon oil
  • 1 tablespoon unsweetened almond milk (or dairy, skim)
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon of freshly ground coffee or instant coffee
  • 1 cup semisweet chocolate chips, divided (Hershey’s)

Directions:

Preheat the oven to 350° F.  Grease a nonstick 9 x 9-inch square baking pan with baking spray and line with parchment paper, leaving a 2-inch overhang on all sides.

Blend the black beans, eggs, cocoa powder, sugar, oil, almond milk, balsamic, baking soda, baking powder and coffee in the blender until smooth and pour into a bowl. Fold in 1/2 cup chocolate chips until combined.  Pour the brownie batter into the prepared pan.  Sprinkle the remaining chocolate chips evenly over the top of the brownies.

Bake the brownies until a toothpick comes out clean, about 30 to 32 minutes.  Allow the brownies to cool completely before slicing them into squares.
