Soft tiramisu recipe with white chocolate – Italian Cuisine


  • 400 g fresh cream
  • 330 g mascarpone
  • 250 g icing sugar
  • 110 g pasteurized egg yolks
  • 100 g espresso coffee
  • 100 g white chocolate
  • 2 g coffee powder
  • 8 dry biscuits
  • unsweetened cocoa powder
  • powder of dehydrated raspberries

For the recipe of soft tiramisu with white chocolate, melt white chocolate with 100g of cream on a warm but not boiling bain-marie, mixing well. Whip the egg yolks with icing sugar, mascarpone and coffee powder.

Separately whip the cream and add it to the mascarpone foam, stirring with a spatula from the bottom to the top to not disassemble the mixture. Spread the chocolate sauce into the bowls and add the cream and mascarpone mixture.

Sprinkle with cocoa and dehydrated raspberry powder. Soak the ladyfingers in espresso coffee, then insert them with the wet part in the tiramisu so that the part not soaked in coffee comes out.

What is the most loved and known Italian dessert in the world? Easy, the tiramisu! In 2016, according to the top list of Google, it was even the recipe most searched and clicked on the web. There is even one Tiramisu Day, which is celebrated March 21, but many would eat it really every day (and in fact in the restaurants of Eataly they sell many, in summer and winter).

Savoiardi, coffee and mascarpone cream

If the paternity of tiramisu contend in many (especially the Veneto and Friuli Venezia Giulia), on his traditional recipe do not discuss: it is done with ladyfingers, coffee and mascarpone cream. As often happens for the great classics, however, every Italian family prepares it in its own way, with different doses, more or less eggs, and even with some variation on the original. And so too Eataly, which proposes tiramisu in all its restaurants, has created the own recipe of this spoon cake: he created itexecutive chef Enrico Panero, on the occasion of the Tiramisu Day 2018.

The ingredients for the perfect tiramisu

The ingredients? THE biscuits of Moro biscuits, a Sardinian company where the eggs still break by hand; the coffee the Supreme of the Social Cooperative Pausa Café, which supports activities for social and economic development in the southern hemisphere and offers prisoners in Saluzzo and Turin a path of social and work reintegration; the organic eggs of Olivero Claudio, produced by hens that scratch in the Piedmont countryside and are also fed with flax and hemp seeds, source of omega 3 and 6; the fresh mascarpone Mambelli, produced with the traditional method without preservatives; the cocoa powder Two Vecchi di Venchi from precious blends of central and south America; the Italy sugar granulated sugar, 100% Italian.

That touch of cream that makes it special

The particularity of the Eataly recipe lies in the fresh cream, which is whipped together with the mascarpone cream to make it softer and lighter. Once ready, pour a little into a glass, add a layer of ladyfingers soaked in coffee, cover with another layer of cream and finish with a sprinkling of cocoa. A simple cake that never tires!
