  • 500 g hulled chicory
  • 500 g vegetable stock
  • 150 g fregula
  • 2 eggs
  • a stalk of celery
  • an onion
  • chili pepper
  • parsley
  • thyme
  • marjoram
  • extra virgin olive oil
  • salt

For the recipe of chicory soup and fregula, slice the onion and fry in a veil of oil with celery sticks and a chilli pepper. Then sauté the chicory, chopped, leaving it to flavor for a few moments. Yes, because the soup really makes the atmosphere at home, it's an intimate, reserved dish.

Rice, vegetables and an inevitable fragrance

As for the most traditional recipes, few ingredients they are enough to create that alchemy of flavors that makes everything perfect. In the case of soup it is essential to prepare a beef broth rich in aromas, in which to cook rice. You can choose between chicken, veal or beef. If you decide to add some bone, you will have a thicker broth, thanks to the collagen that the latter will release during cooking. In addition to meat, basic aromas like onion, carrot, celery and garlic, which should be crushed and fried in a little oil and then the rice, to choose from the most suitable varieties for soups and minestrone. Last but not least, the parsley, the ingredient that gives the soup that extra touch, which can not be renounced.

The recipe for rice soup

For 4 people: take it 250 g of vialone nano rice, an onion, a stalk of celery, a carrot, a clove of garlic, extra virgin olive oil, grated Parmigiano Reggiano, salt and parsley, as well as 1.5 liters of meat broth. First chop the vegetables and fry them in a saucepan with a little oil. Once golden, add the stock and when it reaches the boil, add the rice. Cook for about fifteen minutes and then turn off. Season with salt and finish with a generous sprinkling of Parmesan and chopped parsley. Bring to the steaming table.

1 kombu algae


There Miso soup, the misoshiru, is a light but nutritious dish. The miso fact, produced with soy cotta, is particularly rich in protein and vitamin B and is also considered a perfect anti-carcinogen. Of miso however, they are different, in fact there is the red one (aka-miso), the dark one (tanshoku-miso) and the clear one (shiro-miso), all of different color depending on their composition and the type of fermentation. What I chose to use is dark miso, added to dashi, tofu and wakame seaweed to prepare this traditional Japanese soup.
This recipe reminds me of my trip to Japan, when I tasted this soup for the first time, and the algae and the bowls, in which I served it, are a souvenir of my trip. I hope you like the recipe, leave me a comment if you've ever tasted it or if you'll prepare it;)

Method

How to make miso soup

Prepare the dashi by soaking the kombu seaweed in pieces in a saucepan with water.
After 30 minutes move on the fire and cook for about 15 minutes, without reaching the boiling point.

Then raise the seaweed.

Add the katsuobushi in the same water, bring to a boil and turn off the heat.

3 cook and filter stock

Then filter the dashi and heat it back on the fire.
Melt the miso inside that you will pass through a strainer with tight links.
1 miso in the broth

Now cut the tofu into small pieces and place it in the bowls in which you will serve the soup.
Add the wakame seaweed to each of them.
2 cut the tofu

When the broth reaches boiling pour it into the bowls.
3 add broth

Your miso soup is ready to be served.
