If, on the other hand, you have no time to lose, cook the whole mixture in a pan with butter or oil without giving it a shape, but stirring everything quickly. You will get a very tasty vegetable cream.

Variant with mixed vegetables

If you don't like sprouts you can replace them with the vegetables you prefer, even with those already cooked and advanced.
Do you have any carrots or steamed courgettes? Cook them in a pan with the onion and butter and add to the potatoes.
The same is also true for leafy vegetables.
Potatoes are the base, but otherwise you can play to add the ingredients you prefer.

How to accompany the Bubble And Squeak

These delicious pancakes are delicious just ready and still hot, but they can be kept for a few days and even cold are very good. You can freeze them once cooked and then heat them in the oven if necessary.

  • 500 g potatoes
  • 500 g Swiss chard
  • 120 g breadcrumbs
  • 100 g flour
  • 30 g peeled almonds
  • lemon
  • nutmeg
  • potato starch
  • turmeric powder
  • paprika powder
  • peanut oil
  • salt

For the recipe of chard fritters with almond mayonnaise, peel the potatoes, cut them into cubes and boil them in plenty of boiling salted water for 10 minutes; drain and let them cool. Check the head of the beets and separate the white ribs with the green leaves. Boil the chard leaves in salted water for 5-6 minutes, drain them keeping the boiling water on the fire, cool them in cold water and chop them. Cut the ribs into cubes and boil them in the same water as the leaves for 5 minutes.

In a bowl mix the potatoes, the beets, both the ribs and the chopped leaves, 2 tablespoons of potato starch, a sprinkling of nutmeg, a pinch of salt and the grated 1/4 lemon rind. Shape the dough into 20 balls of about 35 g each. Mix the flour and a pinch of salt in 170 g of water, making a batter. Divide the breadcrumbs into 3 parts: flavor one part with a tablespoon of turmeric, another with a spoonful of paprika and leave the last natural.

Dip the balls gradually in the batter, then pass them in the breadcrumbs alternating the aromas to taste. Blend the almonds and 70 g of water with the mixer until you get a homogeneous milk; add 2 tablespoons of lemon juice, a pinch of salt and continue to blend blending 150 g of peanut oil, making a vegetable mayonnaise. Season to taste with a teaspoon of licorice powder. Fry the balls in plenty of hot peanut oil for 2-3 minutes, gradually drain them on kitchen paper and serve hot with the almond mayonnaise.

What flakes to use?

Simply the ones you prefer and find at the supermarket on the fridge counter.
You don't have to blend them or work them in any particular way, but simply add them to the base of eggs, flour, yeast and sugar. Their grainy texture will feel very little after cooking, but will make the pancakes slightly more moist and compact.

Ingredients

225 g of cottage cheese (cottage cheese)
2 eggs
2 tablespoons of maple syrup
1/2 teaspoon of vanilla extract
250 g of 00 flour
1 teaspoon of yeast
a pinch of salt

Preparation

To prepare these pancakes mix the milk flakes with the other liquid ingredients and then finally add the well sifted flour and baking powder.
Attention, you must not whisk or whisk the eggs with the flakes, but simply stir, not too long.
The best result is obtained by leaving the mixture in the refrigerator for a few hours or a whole night, but you can also prepare them immediately.
Use a very hot buttered non-stick frying pan and pour the mixture with a ladle.
Turn the pancakes as soon as they form bubbles on the surface and cook for a couple of minutes on the other side.

How to serve pancakes with cottage cheese

Obviously if you love pancakes in the classic version then serve them with maple syrup in abundance and a knob of butter.
You can also enrich the dough with blueberries, bananas or strawberries or add fresh fruit later on hot pancakes.
These pancakes in particular are also excellent in a savory version accompanied by smoked salmon or fresh cheeses.
