PB + J Smoothie and Better Blog Retreat

Strawberries, blueberries, peanut butter and almond milk – this is my favorite smoothie to order when I’m at my gym[1]. It tastes almost like peanut butter and jelly – but it actually has no grapes.  I often make this myself at home; the peanut butter is a great source of protein and keeps me full until lunch and I just love how it tastes.

I’ve been doing so much traveling these past few weeks and I’m a bit behind in sharing my amazing four days spent in Park City, Utah with some of my favorite blogging friends for the Better Blog Retreat hosted by Maria from Two Peas and Their Pod and Heidi from Foodie Crush

This was my first time in Park City, Utah, but it won’t be my last – it was gorgeous! We stayed in a beautiful rustic Anthology Storied Destinations[5] vacation home tucked away in the mountains, so secluded it’s only accessible by a ski slope or a hidden tunnel!  

If you ever want to travel to a ski destination with a large group of friends or family – this house is for you! It had an amazing kitchen where we spent much of our time…

The house slept 15 people, plus it has a theater, spa, hot tub… and even an elevator! Here’s a photo of us girls sitting around the dining room table, talking, drinking wine, laughing, Instagraming and just having a great time.

Ingredients:

  • 3/4 cup frozen blueberries (put your blueberries in the freezer!)
  • 3/4 cup sliced fresh strawberries
  • 3/4 unsweetened vanilla almond milk (I used Almond Breeze[6])
  • 1 tbsp peanut butter
  • 5 to 6 drops liquid stevia or sweetener of your choice (NuNaturals Vanilla)
  • 1/4 cup ice

Directions:

Place all the ingredients in the blender and puree until smooth.

Cilantro Lime Shrimp with a Honey Lime Dipping Sauce

This is an old recipe that was a huge hit with my family. I think it would be a great Super Bowl appetizer. If it’s too cold outside to grill, just cook the shrimp in a grill pan or skillet.

I wanted a quick and tasty dinner that was easy to make. I grabbed some shrimp and marinated them in lime zest and juice, cilantro, olive oil and garlic for an hour then had my husband grill them. I had leftover honey lime dressing from the Grilled Corn, Avocado and Tomato Salad[1], so I used it for a dipping sauce and it was so delicious. My whole family really loved these shrimp – we gobbled them all up. I can’t wait to try the honey lime dressing with fish and chicken.

Combine the shrimp, olive oil, lime juice, minced garlic, cilantro, sea salt, and freshly cracked pepper together in a large zip lock bag and marinate in the refrigerator for 1 hour.

Add all of the dressing ingredients in a small bowl and whisk to combine. Set aside.

Soak wooden skewers in water for a few minutes. Skewer the shrimp on the wooden skewers then place on the grill over medium heat. Cook for a few minutes on each side or until pink and juicy.

Remove skewers from grill and serve with the honey lime dipping sauce. Enjoy.

Cilantro Lime Shrimp with a Honey Lime Dipping Sauce






Ingredients:

Shrimp Marinade:

25-30 shrimp
Juice and zest of 1 lime
2 cloves of garlic, minced
2 tbsp fresh cilantro, chopped
1 tsp olive oil
Sea salt and freshly cracked pepper, to taste

Honey Lime Dressing:

Juice of one lime
3 tbsp of vegetable oil
1 tbsp honey
Sea salt and freshly cracked pepper, to taste
1 clove of garlic, minced
Dash of cayenne pepper

Directions:

Combine the shrimp, olive oil, lime juice, minced garlic, cilantro, sea salt, and freshly cracked pepper together in a large zip lock bag and marinate in the refrigerator for 1 hour.

Add all of the dressing ingredients in a small bowl and whisk to combine. Set aside.

Pumpkin Cookies with Browned Butter Icing

Seriously – these cookies are SO AMAZING! We were invited to a friend’s house for a post Thanksgiving turkey dinner and I was in charge of dessert. I found a recipe for these cookies on Cooking Classy’s[1] site and couldn’t wait to try them out.  Not only did the pumpkin cookies sound tasty but the browned butter frosting really had me intrigued.  The cookies turned out to be soft which was a perfect combination with the flavorful and sweet icing.  I loved, loved, loved the flavor the browned butter gave to this icing- it was SO GOOD!  Make these cookies and I bet you won’t regret it.

Preheat oven to 375 degrees.

Combine the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and clove in a bowl until mixed thoroughly  set aside. Using a mixer set on medium speed, whip together butter, brown sugar, and white sugar until pale and fluffy, about 3 – 4 minutes. Add in egg, mixing after the addition until combined. Mix in the sour cream, vanilla extract,  and pumpkin puree then mix well. Slowly add dry ingredients and mix until combined.

Transfer the cookie dough to a zip lock bag then cut the tip and pipe 1 1/2-inch rounds onto a nonstick or  Silpat lined cookie sheet, spacing cookies at least 1 inch apart.

Bake in the oven for about 12 minutes until tops spring back when touched. Allow to cool several minutes on baking sheet before transferring to a wire rack.

Prepare the browned butter icing. Measure the powdered sugar into a mixing bowl, set aside. Brown butter in a small saucepan over medium heat, swirling pan occasionally.  Remove from heat when the golden brown flecks begin to appear in the center of the foamy bubbles.  Carefully pour browned butter over powdered sugar in mixing bowl, use a rubber spatula to scrape any excess butter and browned bits from pan. Add the half and half and stir mixture until smooth and creamy. Spread over cookies with a spoon.  Add extra half and half, about 1 – 2 tsp at a time, to icing mixture to thin because it will thicken as it sits.  

Store in an airtight container in a single layer in refrigerator and rest at room temperature before serving.

Ingredients:

1 1/3 cup plus 1 tbsp flour
1/2 tsp baking powder

1/4 tsp salt
3/4 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
6 tbsp unsalted butter, softened
3/4 cups packed light-brown sugar
6 tbsp white sugar
1 large egg
1/4 cup sour cream
1/2 tsp vanilla extract
3/4 cups canned pumpkin puree
1 recipe Browned Butter Icing, recipe follows

Browned Butter Icing:

2 cups powdered sugar
5 tbsp unsalted butter
2 1/2 tbsp half and half
1/2 tsp vanilla

Directions:
