These oaty cookies were originally made to send to the Australian and New Zealand Army Corps. Easy to make, and even easier to eat, these sticky and sweet biscuits make the perfect lunchbox or afternoon tea treat. And they will store for up to a week too.

These tasty sweet treats make the perfect gift, presented in cellophane bags tied with a colourful ribbons

Ingredients

  • 85g oats
  • 85g desiccated coconut
  • 100g plain flour
  • 100g caster sugar
  • 100g butter
  • 1tbsp golden syrup
  • 1tsp bicarbonate of soda

Method

  1. Preheat the oven to 200°C/Fan180°C/gas mark 4.
  2. Mix together the oats, coconut, flour and sugar in a bowl.
  3. Mel the butter in a small saucepan and add the golden syrup and bicarbonate of soda.
  4. Make a well in the middle of your oat mixture and pour in the butter and golden syrup mix. Stir until well combined.
  5. Line a baking tray with parchment and use a dessertspoon to transfer the mixture.
  6. Bake in batches for 10 minutes, until golden brown.

If you’re looking for a healthy snack of appetizer for St Patrick’s Day, these green deviled eggs are the perfect solution.

My mom adds hard boiled eggs to her guacamole, so I thought why not add guacamole to hard boiled eggs? The results were lovely, and since I was testing them out for the blog, I actually enjoyed them for lunch.

These are a fun, “clean” snack or appetizer, not just as a green food for St Patrick’s day, but for anytime of the year. Loaded with a good dose of healthy fats and perfect for any dietary restriction – vegetarian, gluten-free, weight watchers, low-carb, paleo, and more!

Ingredients:

  • 6 large eggs, hard boiled (recipe here[1])
  • 1 medium haas avocado
  • 2-3 tsp fresh lime juice
  • 1 tsp red onion, minced
  • 1 tbsp minced jalapeno
  • 1 tbsp fresh cilantro, chopped
  • kosher salt and fresh ground pepper, to taste
  • 1 tbsp diced tomato
  • pinch chile powder (for garnish)

Directions:

Peel the cooled hard boiled eggs.

Cut the eggs in half horizontally, and set the yolks aside.

In a bowl, mash the avocado and 2 whole egg yolks; discard the rest. Mix in lime juice, red onion, jalapeño, cilantro, salt and pepper and adjust to taste. Gently fold in tomato.

Scoop heaping spoonfuls of the guacamole into the 12 halved eggs. Sprinkle with a little chile powder for color and arrange on a platter.

I found this recipe on Skinnytaste[1] and couldn’t wait to make it. I never make Caesar salads because they are so unhealthy but this recipe gives you all the Caesar salad flavor but without any of the guilt. I adapted the recipe a bit by adding some Worcestershire sauce, black pepper,  and extra garlic. This creamy dressing has a ton of flavor and it was super simple to make. I loved how tangy and garlicky it was. This will be a regular on my table from now on.

Combine the cheese, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, freshly cracked black pepper, to taste, and anchovies in a small bowl. Mix with an immersion blender until well combined. Add the oil and Greek yogurt and mix with the immersion blender until creamy and smooth. Taste and re-season with freshly cracked pepper, if needed. Enjoy.

1/3 cup of grated Parmesan cheese
1/4 cup of fresh lemon juice
2 cloves of garlic, minced
1/2 tsp Dijon mustard
Dash of Worcestershire Sauce
Freshly cracked pepper, to taste
2 anchovy fillets
1 tbsp olive oil
5 tbsp non fat plain Greek yogurt
