  • 375 g peeled hazelnuts
  • 300 g sugar
  • 200 g fresh cream
  • 200 g dark chocolate
  • 100 g egg white
  • 35 g honey
  • 35 g bitter cocoa

For the recipe for Baci di Alassio, bring the cream to the boil and pour it over the chopped chocolate; stir until it is dissolved in a cream. Let it cool. Toast the hazelnuts in the oven at 180 ° C for about 10 minutes. Take them out of the oven and let them cool.

Collect it in a pastry bag with a star nozzle and distribute it in tufts on a plate lined with baking paper.
