Dark chocolate and ginger flan, preparation

1) Pour milk in a saucepan, add the slices of ginger and, before it reaches a boil, turn off the fire and leave infuse for 20 minutes (or a little longer if you want a more intense aroma). Warm up the oven at 180 °; buttered a 24 cm diameter mold.

2) In a large bowl mixed with a whisk flour, sugar and cocoa powder in order to remove all lumps. In a separate bowl shelled the eggs e beat them with cream and milk (after removing the slices of ginger).

3) Pour the egg mixture on the mixture, add a pinch of salt e jumbled up with the whisk until you get a smooth and homogeneous mixture.

4) Pour the mixture in the prepared mold, level it with a spatula and then drown yourself figs cleaned and cut in half (keeping the cut side up). Sprinkle with chopped dark chocolate e cook the cake in a preheated oven for 35/40 minutes.

1) Generously grease 4 airtight glass jars of 2 dl capacity and cover the bottom with a baking paper disc. Collect the butter with the sugar and whip them with an electric whisk until the mixture is smooth and fluffy. Then add to the dough, in order: cocoa, 1 egg, half the flour, 1 second egg, the remaining flour, the remaining egg, salt, coarsely chopped chocolate and grated orange zest. Work the mixture with a spatula, combining the next ingredient only when the previous one is well incorporated.

2) Put the marmalade in a small saucepan and let it melt for a few minutes over very low heat. Transfer the chocolate mixture into a pastry bag and squeeze it into the jars, filling them up to halfway; add a spoonful of jam each, cover with the remaining dough and finish with a little jam.

3) Seal the jars hermetically, transfer them to a pot, cover them completely with water and boil (100 °) for 1 hour. Let the cakes cool, remove them from the jars and serve accompanied with a spoonful of sour cream.

  • 200 g fresh cream
  • 150 g dark chocolate
  • 120 g granulated sugar
  • 90 g soft butter
  • 4 eggs
  • 1 egg
  • 50 g sugar
  • 70 g flour
  • 10 g cocoa
  • 3 g baking powder
  • 70 g butter
  • 20 g milk chocolate

FOR THE DARK MOUSSE
Mounted the egg yolks with half the sugar.
Melt the chocolate cut into small pieces and, when it is completely melted, add the butter and mix. Pour over the egg yolks and mix.
Mounted the egg whites, not too firm, with the other half of the sugar and incorporate them into the mixture of egg yolks and chocolate. Finally, also add the whipped cream, mixing gently.
Pour the mousse obtained in 6 cups and put them in the refrigerator to harden for 2 hours.

FOR THE MADELINE
Jumbled up the egg with the sugar, then add the flour, cocoa and 3 baking powder; then mix the melted butter and the chopped milk chocolate.
Leave rest the mixture for 2 hours, then pour it into the special molds for madeleines and bake at 200 ° C for 6-8 minutes.
