Frozen Chocolate Covered Banana Slices Topped with Coconut

Need I say more? The title alone makes me drool. These fun and tasty treats were fun to make this afternoon with my kids. It was 100 degrees outside so we stayed inside and made these delicious bite sized desserts along with some popsicles. These treats were quick and easy – the hardest part was waiting for them to freeze. These banana slices are to be eaten straight from the freezer because the banana gets mushy if thawed. Needless to say, these were a HUGE hit with both of my kids.

Stir chocolate and oil in heavy small saucepan over low heat just until smooth. Let stand 10 minutes to cool.

Place the coconut in a separate shallow dish. Line baking sheet with parchment paper. Using a fork, dip 1 banana slice in chocolate, coating completely. Shake off excess chocolate. Place on the lined baking sheet. Repeat with remaining bananas. Sprinkle the top of each banana slice with shredded coconut.

Place into the freezer and freeze until firm, about 3-4 hours, then serve immediately. Store the remaining banana slices in a freezer bag or sealed container. Enjoy.

Ingredients:

2 cups milk chocolate chips
2 tablespoons coconut oil
Shredded sweetened coconut
3 ripe bananas, peeled, cut into 1/2-inch-thick slices

Directions:

Oven Baked French Fries

One of my very favorite cookbooks is called The New Best Recipe (from the editors of Cook’s Illustrated). I always find the best recipes in there. I wanted to serve fries with the Grilled Chicken Sliders with Avocado[1] but I didn’t want to fry them because we are trying to eat healthier. I found a great recipe in this cookbook that I used less oil but other than that did it exactly as written. I left the fries in for a little too long due to helping out with a homework problem but they still turned out amazingly delicious. They were crisp on the outside and soft and delicious on the inside. I served these fries with fry sauce (a mixture of ketchup & mayonnaise) alongside the sliders for a fun and delicious meal without all of the guilt!

Peel the russet potatoes then cut each potato lengthwise into same size fries. Place the cut fries into a large bowl and cover with hot tap water.

Adjust the oven rack to the lowest position. Preheat the oven to 475 degrees. Line a heavy-duty baking sheet with tin foil then drizzle two tablespoons of oil on the tin foil followed by a sprinkling of sea salt and freshly cracked black pepper, to taste. Set aside.

Drain the potatoes then place on kitchen towels (or paper towels) and pat dry. Rinse and wipe out the bowl then dry it with a kitchen towel. Place the dried fries back into the dry bowl then drizzle the last tablespoon of oil onto the fries.  Toss with your hands until evenly coated. Arrange the fries in a single layer on the prepared baking sheet. Season with sea salt and freshly cracked pepper, to taste.

Cover the baking sheet tightly with tin foil and place into the oven to bake for 5 minutes. Remove the foil and continue to bake until the bottoms are spotty golden brown, about 15-20 minutes, rotating the baking sheet after 10 minutes. Using tongs, flip each fry, keeping the potatoes in a single layer. Continue baking until the fries are golden and crispy, 5-10 minutes longer, rotating the pan as needed if the fries are browning unevenly.

Transfer the fries to some paper towels to drain. Serve immediately.  Enjoy.

Cook Time: 25-30 min.

3-4 tbsp of canola oil
Sea salt and freshly cracked pepper, to taste

I took my kids to the grocery store after I picked them up from school to pick up some things for dinner. I planned on making barbecue chicken breasts but they both saw the ribs and asked me to make barbecue ribs instead. I seasoned them simply then wrapped them in foil and baked them for an hour. I unwrapped the ribs then slathered them in barbecue sauce and put them back in the oven to bake for another hour. The ribs turned out tender and so flavorful. We all enjoyed them – especially my husband who took the leftovers to work today. I served these ribs with the Roasted Asparagus with Garlicky Italian Panko[1] and a spinach side dish that will post tomorrow.

Preheat the oven to 350 degrees. Line a baking sheet with tin foil (for easier clean up).

Remove the silverskin membrane from the back of the ribs. See how to do it here[2]. Spread the minced garlic evenly over both sides of the ribs. Season, to taste, with sea salt, freshly cracked pepper, garlic powder, onion powder, and paprika evenly over both sides of the ribs. Place the seasoned ribs on a large piece of foil then top with another piece of  foil and roll all of the edges to make a sealed packet. Place on the baking sheet and into the oven and bake for 1 hour.

Carefully, open the tin foil packed ribs then slather with your favorite barbecue sauce. Place back into the oven, unwrapped, for another hour. Remove from the oven and place on a cutting board. Let them rest for at least 5 minutes before slicing them and serving. Enjoy.

1 pack of baby back pork ribs
3 cloves of garlic, minced
Sea salt and freshly cracked pepper, to taste
Garlic powder, to taste
Onion powder, to taste
Paprika, to taste
Barbecue sauce

Directions:

Preheat the oven to 350 degrees. Line a baking sheet with tin foil (for easier clean up).
