Honey-Soy Chicken Drumsticks

My son loves Asian food so I went in search of an Asian inspired chicken drumstick recipe. I found one Very Culinary[1] that sounded perfect and it used ingredients I had on hand – I love that. It look minutes to throw the marinade together and the chicken smelled fantastic while it baked. It was a big hit with all of us – the chicken turned out moist, tender, and very flavorful. My son most definitely approved of this dish!

Combine the honey, soy sauce, garlic, and ginger together in a large zip lock bag. Add the chicken drumsticks to the bag and seal. Place into the refrigerator for at least 4 hours.

Preheat oven to 425 degrees. Line a baking sheet with tinfoil then coat with cooking spray.

Lay chicken on the baking sheet. Bake for 35 minutes, or until a cooked through. Brush the remaining marinade over the chicken every 10 minutes.

Sprinkle some fresh cilantro, sesame seeds, and green onions on top and serve with Garlic Rice with Green Onions and Cilantro[2].

Yield: 4 +

Prep Time: 5 min.

Cook Time: 35 min.

Total Time: 35-40 min.



Ingredients:

8 chicken drumsticks
3 tbsp of honey
5 tbsp of soy sauce
4 cloves of garlic, minced
1 tbsp ginger, minced
1 tsp sesame seeds, for garnish
2 scallions, chopped, for garnish
1 tbsp fresh cilantro, chopped for garnish

Directions:

Combine the honey, soy sauce, garlic, and ginger together in a large zip lock bag. Add the chicken drumsticks to the bag and seal. Place into the refrigerator for at least 4 hours.

Pumpkin-Oatmeal Cookies with White Chocolate Chips

We were heading to a friend’s house for dinner and I was in charge of bringing a salad and dessert. I decided to make some pumpkin cookies with oatmeal and white chocolate chips. They smelled incredible while they baked and tasted fantastic. These cookies were cakey without being dense, sweet, spicy, and absolutely delicious. They were a big hit with everyone, especially the kids. 

Preheat the oven to 375 degrees. Line a baking sheet with a silpat mat.

Combine the flour, oats, salt, baking soda, cinnamon, cloves, nutmeg, and ginger together in a bowl. Mix until well combined.

Using a mixer, beat the sugars together with the butter and egg until cream smooth. Add the pumpkin and stir until well combined. Add the oat mixture into the pumpkin mixture until just combined then add 1 cup of the white chocolate chips until well mixed.

Drop spoonfuls of the the dough onto the prepared baking sheet then top each cookie equally with the remaining white chocolate chips.  Place into the oven and bake for 10-12 minutes. Remove from the oven and let cool for 2 minutes before moving the cookies to a wire rack to cool.  Serve with ice cold milk if desired. Enjoy.

Cook Time: 10-12 min.

1 3/4 cups of rolled oats
1 1/2 cups of flour
1 tsp salt
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/8 tsp ginger
3/4 cup of white sugar
1/4 cup of brown sugar
1/2 cup of unsalted butter, soft
1 egg
1 cup of canned pumpkin
1 1/4 cup of white chocolate chips (divided)

Directions:

Preheat the oven to 375 degrees. Line a baking sheet with a silpat mat.

My whole family loves Asian food so I have been experimenting more with it. I saw these wings on Up Close & Tasty[1] that looked terrific. I adapted it a bit by baking them in the oven instead of grilling. They turned out terrific. The sauce was sticky and flavorful and we all, kids included, loved these wings. There was not a single wing left on the serving plate – I love that! These wings paired nicely with the Spicy Green Beans and Sesame Noodles with Sautéed Shiitake Mushrooms and Kale.

Preheat the oven to 350 degrees. Line a baking sheet with tin foil.

Make the hoisin sauce – click here for the recipe.[2]

Stir together in a bowl the hoisin sauce, soy sauce, honey, sesame oil, vegetable oil, and cayenne.

If the chicken wings need to be cut into pieces – click this link for instructions.[3] Season both sides of wings with sea salt, freshly cracked pepper, and garlic powder, to taste then place them on a baking sheet in a single layer, skin side up.

Place into the oven and roast for 40 minutes. Remove wings from the oven and place them in a large bowl to toss with the sauce. Place the sauced wings back on the baking sheet and into the oven for 5 minutes. Serve and enjoy.

1 tbsp soy sauce
2 tbsp honey
1 tsp sesame oil
1 tsp vegetable oil
1 garlic clove, minced
Dash cayenne
2 lb chicken wings
Sea salt and freshly cracked pepper, to taste
Garlic powder, to taste
Sesame seeds, toasted
2 green onions, thinly sliced

Directions:

Preheat the oven to 350 degrees. Line a baking sheet with tin foil.

Make the hoisin sauce – click the link up above for the recipe.

Stir together in a bowl the hoisin sauce, soy sauce, honey, sesame oil, vegetable oil, and cayenne.

If the chicken wings need to be cut into pieces – click this link for instructions. Season both sides of wings with sea salt, freshly cracked pepper, and garlic powder, to taste then place them on a baking sheet in a single layer, skin side up.

Place into the oven and roast for 40 minutes. Remove wings from the oven and place them in a large bowl to toss with the sauce. Place the sauced wings back on the baking sheet and into the oven for 5 minutes. Serve and enjoy.
