Clean the pumpkin by removing the outer skin and internal filaments, then cut the pulp into cubes.

Heat a drizzle of oil in a large non-stick pan, add the pumpkin, let it soften, then season with a pinch of salt, cover with water and cook until the pumpkin is soft enough to mash with a fork, then blend it.

Cut the bacon into strips and brown it in a non-stick pan (without adding oil) until part of the fat melts and the bacon becomes golden and crisp.
Meanwhile, cook the pasta in plenty of lightly salted boiling water.

Drain the pasta al dente and add it to the pumpkin cream, then also add 2/3 of the bacon (so as to use the remaining bacon to decorate the dishes).

The pumpkin and bacon cream paste is ready: serve, decorate with crispy bacon and cocoa (or pepper) and serve.

Flour the meat well, covering the entire surface.

Fry the bacon with butter and rosemary; when the bacon is golden, add the meat and brown it on both sides.
Deglaze with the wine, then season with salt and pepper, cover with the lid and cook for 15-20 minutes.

The veal cutlets with bacon are ready: serve them immediately.

Penne al coccio, the preparation

1) Dice the bacon and put it to cook with a tablespoon of oil and low heat, possibly in a terracotta pan.

2) Cut the mushrooms into slices and add them to the sautéed, also add the peas and mix gently for 5 minutes, salty, blend with white wine and continue cooking for 10 minutes, until the elements of the sauce have amalgamated. If you use it, mix the sauce with 2 or 3 tablespoons of fresh cream.

3) Boil the penne, drain when al dente and pour into the saucepan.

4) Pepper, cook a couple of minutes more, turn off and sprinkle the flaky truffle.
