Apple custard: salty or sweet? Try them both!


Stock up on apples in the next few days because you will not only be making cakes and muffins this winter, but also this delicious savory cream to serve as an appetizer or main course

If you love the apples and you would like to use them in the kitchen also to prepare savory recipes, this cream is what you are looking for.
Not really a velvety because it doesn't have cream and neither does it potatoes, but a fairly liquid cream with a sweet taste that we will enrich with a savory and slightly crunchy part.
A first, or single dish, simple and quick to prepare. We are sure you will love it.

Apple custard recipe

Ingrediants

4 red delicious apples
1 cup of milk
1.5 l of broth
1 tablespoon of flour 00
1 slice of cooked ham
1 lemon
extra virgin olive oil
1 shallot
Salt to taste

Method

Peel the apples and grate them.
Wet them with lemon juice and then cook them in boiling broth for ten minutes.
Chop the shallot and brown it in a pan with a little oil.
Add the chopped ham and let the sauce dry for a few minutes over low heat.
Once cold, blend the apples with the milk and flour and add the sautéed ham and shallot to the smoothie.
You can garnish with sour cream if you want a contrast of flavors, or top it all off with crusty bread with oil.
We do not recommend Parmesan, while you can play with aromatic herbs and seeds.

The sweet apple custard

You can transform this cream into a truly unusual dessert or a warm cuddle with the scent of cinnamon and nutmeg, even to drink in a cup.
Just replace the broth with the milk and then simply add the flour or cornstarch and let everything thicken, obviously without making any sauté with the ham!
Scented with abundant cinnamon and nutmeg if you prefer with the lemon zest you used on the apples.
Sweeten to taste with sugar dissolved in hot milk or with maple syrup added at the end on the ready dish.

Which apples to use?

You know Snow White's red apple?
To prepare this cream you have to use a red delicious, sweet, but not too much and with a crunchy consistency.
The taste is delicate and on the palate it is very fresh.
Alternatively, you can try the golden apples, which however are definitely more suitable for the sweet version together with rennets.

Apple pie with cream, preparation

1) Warm up milk e immerse yourself cinnamon. Separately in a bowl collect 3 egg yolks with 130 g of sugar.

2) Add the starch, diluted with little milk e you work with a whisk until the mixture is homogeneous.

3) Pour gradually all of the remaining milk and cook in a bain-marie for 10 minutes, until the cream has thickened; let it cool. Soak raisins in a little liqueur. Cut into round slices 4 apples e immerse them gradually in water acidulated with lemon.

4) Take a non-stick cake pan with high sides, 24 cm in diameter, preferably hinged; obtained from the sheet 3 discs, 2 of diameter of the cake pan, one a little wider. Lined the pan with a sheet of moistened parchment paper, then settle down the largest disc, making it go up on the edges.

5) Pour in the center of the pastry a generous spoonful of cream e roll it out in an even layer.

6) Cover with apple slices e distribute yourselves over half of the pine nuts and raisins drained from the liqueur.

7) Cover with a second pastry disc e carry on with a layer of cream, apples, raisins and pine nuts.

8) Finish with the last disc of puff pastry e brushed with the remaining yolk beaten with a little water.

9) Put in the center the remaining apple, half sliced ​​and half whole, and brush it with a syrup prepared with the rest
sugar and a little water. Cook in the oven at 180 ° for 40 minutes, baked And sprinkle of powdered sugar.

Fontina and apple risotto recipe – Italian Cuisine


  • 350 g Carnaroli rice
  • 150 g Fontina Dop
  • 130 g butter
  • 50 g Parmigiano Reggiano Dop
  • 3 green apples
  • vegetable broth
  • kirsch
  • salt
  • pepper

For the recipe of the fontina and apple risotto, toast the rice with 50 g of butter and a pinch of salt for 2-3 minutes. Deglaze with kirsch and sprinkle with 1 ladle of broth. Cook adding a little broth at a time (about 1 liter), in 15 minutes.
Stir the risotto with the remaining butter, grated Parmesan cheese and diced fontina. Also add 2 apples, peeled and diced.
Cover the rice and let it rest for 3-4 minutes.
Cut the apple left in thin slices. Season with salt and pepper and serve completing with the apple slices and, to taste, with fried sage.
