They are like donuts, but tastier. You will love the sweet version, but we also offer you the perfect savory version for an aperitif

The potato donuts they are a sweet snack to eat at any time of the day.
They are small Donuts which have crushed potatoes in the dough and are therefore very soft and tasty.
you can fry them or bake them in the oven and if you want to enrich them we will give you some tips.
Meanwhile, let's start with the basic recipe.

The recipe for sweet potato donuts

Ingredients for about 15 donuts

250 g of potatoes
500 g of 00 flour
40 g of butter
25 g of fresh brewer's yeast
20 g of sugar
2 eggs
50 ml of milk
peanut oil

Method

First dip the well-washed and peeled potatoes in a pan full of cold water and bring to a boil.
After about 30 minutes (starting from the boil) they will be soft, so drain them and still hot, mash them.
Dissolve the yeast in the slightly heated but not boiling milk and sift the flour aside.
In a container mix the flour with the mashed potatoes, the soft butter, the sugar, the egg, the milk and the yeast.
Work the mixture with your hands adding more milk if necessary.
Then cover everything with plastic wrap and let it rise for about 2 hours.
After this time, take pieces of dough and make donuts of the size you prefer.
Let them rise well covered for another hour and then fry them in boiling seed oil.
Once drained on frying paper, pass them in granulated sugar.

Lighter in the oven

You can also opt for lighter cooking and therefore in the oven.
Just lay the donuts on a baking tray lined with parchment paper and cook them at 180 ° for about 25 minutes, or at least until golden brown.
Once ready, proceed as for the fried version and then pass them in sugar.

Rich dough I fry there

The basic dough of potato donuts is already very tasty, but if you want to enrich it with sultanas, lemon zest or orange. If you love aromas you can add gods fennel or anise seeds.
And why not try them also in the version cocoa with chocolate chips? Just add a spoonful of cocoa in the base dough and a handful of chocolate chips.
In the latter case, however, we suggest you bake them in the oven.

Donuts, pancakes or donuts

With the donut dough you can also make some pancakes, the size you prefer, or the donuts. For the pancakes, take parts of the dough a little at a time and roll them out making small pizzas, let them rise and then fry them. They will be slightly crunchy on the ends.
To make donuts, or krapfen, you must instead make little balls larger than a walnut, let them rise for an hour or two and then fry them.
It is always better to opt for small sizes to facilitate leavening and obtain a softer consistency.
You can finally stuff the donuts with cream or jam and sprinkle the pancakes with sugar.

Salty version

Omitting the sugar in the basic recipe and adding a pinch of salt these donuts will become one salty snack perfect for an aperitif.
You can accompany them with cold cuts, cheeses and vegetables and you can also stuff them by cutting them in half.
Again you have two alternatives for cooking.
