Ingredients
Peel the potatoes and grate them with the big hole grater. Soak them in plenty of cold water for 15 minutes; change the water and leave them to soak for another 15 minutes.
drain well and dry them, dabbing them with a cloth.
Put them in a bowl and add the eggs, beaten, then the flour and a pinch of salt.
Fry the mixture forming small pancakes in a pan with plenty of hot oil. Turn them several times in the oil, for 5-6 minutes in all.
Strain the pancakes (you will get ten of them) on kitchen paper and pass them, still hot, in the granulated sugar (which will thus remain well adherent). Serve them immediately.
