Ingredients
- 2 carrots
- 500 g cauliflower florets
- 1 stalk of celery
- 1 onion
- 1 fennel
- 1 bell pepper
- White wine vinegar
- salt
For the recipe from the Giardiniera, clean the vegetables, cut everything into more or less uniform pieces and collect them in a large container.
Prepare a solution by dissolving 80 g of salt in 1 liter of water and pour it over the vegetables so that they are completely covered.
Leave rest for about 12 hours, then drain the vegetables and rinse them. Prepare a second solution made with 1 liter of water and 1 liter of white wine vinegar.
Fill the jars with the vegetables and cover them with the solution of water and vinegar. Close the jars and boil them for about 15 minutes. Remove them from boiling water and let them cool slowly.
