This fruity twist on the traditional family teatime treat Parkin, is sure to go down well. Easy and quick to make, the combination of fresh apple with warming cinnamon and mixed spice is a real treat. It is best made a few days in advance to allow the flavour to mellow and become deliciously moist

To freeze-wrap the cold cake in a freezer bag, seal and freeze it for up to 1 month

Ingredients

  • 100g butter
  • 125g soft brown sugar
  • 1 egg
  • 175g self-raising flour
  • 50g oats
  • 1tsp mixed spice
  • 2 apples, peeled, cored and chopped
  • 1tsp orange zest
  • 1tsp cinnamon

Method

  1. Heat the oven to 200°C/Fan 180°C/Gas mark 6.
  2. Beat together the butter and sugar, until pale and light. Add in the egg and beat again.
  3. Fold in the flour, oats and mixed spice.
  4. Line a square baking tin with parchment. Tip in half of the mixture and sprinkle with half of the chopped apple, half of the orange zest and half of the cinnamon.
  5. Top with the remaining mixture and scatter with the remaining apple, orange zest and cinnamon.
  6. Bake for 30 minutes, until cooked.

Baked apples are a classic way to use up seasonal Bramley apples. The addition of the crumble topping gives the soft, sweet apples a nice crunch. Spiced with cinnamon, this is a great combination of two childhood puds. Perfect served with a dollop of vanilla ice cream or splash of custard

If you don’t like raisins, try stuffing the apples with dried dates for an extra sticky sweet hit

Ingredients

  • 6 eating apples, cored
  • 50g sultanas
  • 1tsp cinnamon
  • 3tbsp plain flour
  • 4tbsp demerara sugar
  • 60g, hazlenuts
  • 50g butter

Method

  1. Preheat the oven to 200°C/Fan 180°C/gas mark 4.
  2. Put the apples into a baking dish.
  3. Mix together the sultanas and cinnamon and sprinkle into the apple holes. Pour a little cold water around the apples and bake for 30 minutes, until the skin is loose.
  4. Put the flour, sugar and hazlenuts into a food processor and whizz until the nuts are coarse. Add the butter and whizz again until the mixture resembles breadcrumbs.
  5. When the apples are ready, sprinkle with the crumble mix, pressing down. Bake again for 30 minutes.

This warming, low-fat pumpkin soup recipe is perfect for Halloween – especially when it’s served with breadstick broomsticks!

To spice up your pumpkin soup, crumble in a pinch of dried chilli when you’re cooking the onion.

Ingredients

  • 2tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 700g (1lb 6oz) pumpkin flesh, roughly chopped (can use butternut squash instead)
  • 2 sweet potatoes, peeled and roughly chopped
  • 1.2 ltrs (2pts) water or vegetable stock
  • 200ml (7fl oz) soya light alternative to milk
  • 4tbsp soya alternative to cream

For the ‘broomsticks’

  • 4 part-baked breadsticks
  • 2tbsp olive oil

Method

  1. Heat the olive oil in a large pan, add the onion and garlic and cook for a few minutes to soften.
  2. Add the pumpkin and sweet potato and cook for a couple of mins, then add the water or stock. Season with salt and ground black pepper, cover and bring to the boil, then simmer for 25 mins until the pumpkin and sweet potato are really tender.
  3. Meanwhile, preheat the oven to 200°C/400°F/gas mark 6. Cut the bread in half lengthways, then make several cuts one third of the way up the length to look like broom bristles. Repeat with the other bread, put onto a large baking sheet and drizzle with olive oil. Bake for 5-8 mins until golden.
  4. Stir the soya light into the soup, whiz everything together in blender or processor in batches until smooth. Return to the pan and gently warm through. Pour into bowls and finish with a swirl of soya alternative to cream.
