  • 100 g very fine corn flour

Method

First dip the well-washed and peeled potatoes in a pan full of cold water and bring to a boil.
After about 30 minutes (starting from the boil) they will be soft, so drain them and still hot, mash them.
Dissolve the yeast in the slightly heated but not boiling milk and sift the flour aside.
In a container mix the flour with the mashed potatoes, the soft butter, the sugar, the egg, the milk and the yeast.
Work the mixture with your hands adding more milk if necessary.
Then cover everything with plastic wrap and let it rise for about 2 hours.
After this time, take pieces of dough and make donuts of the size you prefer.
Let them rise well covered for another hour and then fry them in boiling seed oil.
Once drained on frying paper, pass them in granulated sugar.

Lighter in the oven

You can also opt for lighter cooking and therefore in the oven.
Just lay the donuts on a baking tray lined with parchment paper and cook them at 180 ° for about 25 minutes, or at least until golden brown.
Once ready, proceed as for the fried version and then pass them in sugar.

Method

Clean the pears: wash them well under running water, peel them, remove the core. Cut them into cubes and keep them in lemon juice so that they do not darken while waiting to be cooked.

Boil the water with the sugar. Once the boil is reached, remove the pan from the heat and add the pears.
