Christmas Hamlets – To Eat or Not to Eat Will Not Be a Question

I had been fantasizing for weeks about doing a whole,
home-cured ham for the holidays. I always get lots of requests for this kind of
thing, and was fully prepared to give it a go, but then a strange thing
happened, I heard the word “Hamlet.” 

It was on TV, and completely unrelated to
cured pork, but for whatever reason the word made me think of cute little,
individually sized hams. That’s all it took, and off I went trying to figure out how
to make this thing happen. I knew I wanted a process that wouldn’t require the
pink curing salts used in commercially produced hams, not because they are
unhealthy, they’re not, but because it would be hard for some of you to find.


I’ve read things in the past about using celery’s naturally
occurring nitrates to accomplish the same thing, so that’s what I used, and as
you’ll hear me say several times in the video, I was thrilled with the results!
While not exactly like a classic city ham, this was very close. The firm, moist
texture was great, the salt level was spot on, and since we used loin instead
of leg, there’s even a little less fat.

I’m afraid I won’t be able to help much with questions about
how to do this with bigger or different cuts, as this was my first foray into
home-cured ham, so if you are going to attempt this, please go to a good
butcher to get the exact same size “chops” that I used. If you do, and follow
these simple steps, I think you will have a holiday meal “to die for.” Sorry, but you didn’t expect me to do this entire post without one forced reference to
the play, did you? Enjoy!


Ingredients for 4 Hamlets:
4 thick-cut (10-12 oz) center cut, boneless pork loin
“chops”
For the brine:
1/2 cup *kosher salt plus 1 tablespoon
(*if using fine table salt, you’d only need barely 1/3 cup)
3/4 cup packed brown sugar
1 tsp finely ground black pepper
1 tsp allspice
1/2 ground cloves
1 bay leaf
1 1/2 cups boiling water to dissolve salt and sugar
3 celery stalks (about 2 cups chopped)
1/2 yellow onion
3 cloves garlic
2 cups cold water to puree vegetables in blender, plus add
enough cold water to make 2 quarts total volume of brine
Brine for 48 hours before roasting

For the glaze:
1/4 cup packed brown sugar
2 tbsp Dijon mustard
pinch of cayenne
whole cloves as needed

Roast at 325 degrees F. until an internal temp of 145
degrees F. is reached.

Gordon Ramsay’s Herb Crusted Rack of Lamb ? F Word Series One

Gordon Ramsay made this tasty looking rack of lamb on the first episode of the first season of The F Word[1]. Like many of Gordon’s recipes, the primary herb ingredients are rosemary, thyme and garlic. This is sure to be a scrumptious meal for fans of Chef Ramsay’s cooking.

Ingredients for the Lamb:

  • 2 large racks of Lamb cut in half with 3 bones per serving
  • Salt
  • Pepper
  • Olive Oil

Ingredients for the Crust:

  • 4 slices of stale bread made into crumbs.
  • 7 Tbs. grated parmesan (roughly 1/2 a cup)
  • Sprig parsley
  • Sprig thyme
  • Sprig coriander
  • Sprig rosemary
  • 2 tablespoons English mustard (or sub with dijon)
  • splash of olive oil

Preparing the Lamb:

Pre-heat the oven to 400 degrees Fahrenheit. It should actually be 392 degrees, but don’t worry about getting that technical unless you have a digital oven.

Place lamb on cutting board fat side up. Lightly score the fat layer with a sharp knife. Next, generously sprinkle the lamb with salt and pepper. Mop up the excess seasoning with the rack of lamb, ensuring it’s thoroughly coated.

Heat some olive oil in an oven safe pan. Seal the lamb by holding each side in the oil long enough to develop color (careful not to burn your hands). Gordon Ramsay says, “it’s simple mathematics, no color, equals no taste”. Quite simple indeed! Make sure you brown that lamb.

Transfer the pan with the lamb into the oven and bake for 7-8 minutes. Prepare the crust while the lamb is cooking.

Preparing the Crust:

Place  all of the ingredients for the crust except the mustard into a blender and pulse several times until it looks nice and green. Make sure you don’t over do it with the olive oil, just a splash.

Pour the mixture into a deep dish (bowl or plate) and set aside.

Putting it All Together:

Remove the lamb from the oven and brush generously with mustard. Dip the lamb into the crust mixture coating it completely. Dip several times to ensure an even coating. Allow meat to rest for a bit.

Place it back into the oven for 3-4 minutes when you’re ready to serve.

Gordon serves the lamb with potatoes boulangère and courgettes provençal, but you can serve with anything you find fitting. I’ll gladly post the recipe for the side dishes if someone wants it. Just ask for it in a comment.

The golden rule for making perfect mash is to choose the right variety of potatoes. Usually called floury potatoes they have a drier more starchy flesh which after boiling will produce a lovely fluffy mash. Some of the most popular floury potatoes are Desiree, Maris Piper and King Edwards. It’s also essential not to overcook the potatoes or they will become water logged – if this does happen return the drained potatoes to the pan and heat very gently, shaking the pan occasionally until the excess moisture has evaporated.

Flavour your basic mash with grated cheese, smooth or wholegrain mustard, horseradish sauce or soured cream, if you like.

Ingredients

  • 900g floury potatoes, peeled
  • Salt and freshly ground black pepper
  • 50g butter
  • 2-4tbsp hot milk

Method

  1. Cut the peeled potatoes into even-sized chunks and cook in a large pan of salted boiling water for 10-15 mins until just tender. Drain the potatoes into a large colander and leave for 3-4 mins.
  2. Return the potatoes to the pan with the butter and 2 tbsp of the hot milk. Mash thoroughly until smooth, adding a little more hot milk for a softer mash. Season to taste with salt and freshly ground black pepper.
