Noodles are oriental spaghetti generally based on rice flour, or buckwheat, with and without egg, which may look like spaghetti in appearance, but in reality they have a very different texture and flavor. You can buy them fresh or dried and you can choose them thin or robust.
You can find them in all supermarkets and in ethnic product stores.

They are very versatile and lend themselves to many preparations.
They are excellent with vegetables, broth, meat and fish.
The final touch, however, what makes them truly special is the exotic ingredient which can be a particular spice or peanut butter.
This is to say that yes, you could also season them with a simple tomato sauce, but they would lose their nature.

Noodles with vegetables

Cook the knobs in boiling salted water for the cooking time indicated on the package. If they are dry they will cook more, if they are much less fresh. In a wok or in a non-stick pan, sauté courgettes, carrots and onion cut in julienne or in small pieces anyway. Use light and fragrant seed oil and not olive oil. Leave the vegetables very crunchy and finish stir-frying with the drained noodles and a little soy sauce.

Noodles with peanut butter

A truly original and very tasty recipe for palates more used to ethnic flavors. As always, cook the noodles separately and then once drained, season them with a sauce prepared with two tablespoons of peanut butter, a tablespoon of soy sauce, 2 tablespoons of hot water, a tablespoon of lime juice and complete with a grated of lemon zest and chives.

Noodles with chicken

A complete meat and vegetable dish that children will love too.
You have to toss a spring onion, courgettes and carrots in a wok together with a chicken breast cut into strips. Cook over a high heat without stewing the vegetables. Almost at the end of cooking add the cooked and drained noodles and a beaten egg. Stir quickly adding also soy sauce and complete with a few slices of lime.

Shrimp noodles

The recipe is similar to the previous one only that instead of chicken you have to use shelled shrimp and intestines (the black thread on the back). To make the dish even tastier you can cook prawns and chicken together and add lime juice which gives an extra boost to the already decided taste.

Noodles with coconut soup

A slightly more complex recipe, but only because there are many ingredients.
The flavor is extraordinary, especially if you love bold combinations.
In a pan, heat a clove of garlic with seed oil and brown chicken nuggets with green curry paste. Then add some coconut milk and plenty of chicken broth and soy sauce and cook the soup for about 15 minutes. At the end of cooking add some curry powder, lime juice and a pinch of salt. Cook the noodles separately and then dip them in this chicken and coconut soup and serve hot.

Porcini

Let's start with a great classic. Porcini mushrooms are the most used for tagliatelle thanks to their intense aroma, the pleasant consistency of the stems and of the cap and the sweet taste, which makes the dishes particularly delicate. To give an extra twist to the porcini based pasta, we can count on simple ingredients such as tufts of chopped parsley, beans and nuts.

Champignon

Seasoning tagliatelle with mushrooms is a simple idea to create a first course that smells of wood thanks to an ingredient that is easy to find and often less expensive than other types of mushrooms. Prepare them by cleaning them and cutting them into thin vertical slices without removing the stem. Trifoliate them in a pan with garlic, extra virgin olive oil and chilli for about twenty minutes. This will be the seasoning of our tagliatelle that we drain well al dente and season with the mushrooms and a knob of butter.

pioppini

Another precious ingredient for our noodles are the pioppini. Less usual than those previously treated, they will pamper the palate of those who love simple, intense and instinctive flavors. To amplify the rustic effect of the recipe, cook them stewed, perhaps flavoring the sauce with grainy sausage.

Chanterelles

Tagliatelle with chanterelles are almost as famous as those with porcini mushrooms. These mushrooms, also called chanterelles, marry perfectly with first courses enriching them with their strong flavor and pleasant consistency. For an optimal effect it is necessary blanch them before passing them in the pan with butter and chopped onion. Add the two flours in a bowl.
Stir and add the eggs in the center, then start to mix and knead until you get a smooth dough.
Cover with a cloth and let it rest at room temperature for 30 minutes.

After the rest time, roll out the dough into a thin sheet on a lightly floured surface, then cut the noodles.
Create small nests by rolling a couple of noodles at a time, cover again and let it sit for another 30 minutes.

After this other half hour, prepare the seasoning: Brown the diced pancetta and the rosemary in tufts with a little oil.
Add the coarsely chopped chestnuts and blend with the wine.
Meanwhile boil the noodles in boiling salted water for just a couple of minutes, then drain and add them to the pan with the sauce.
Stir in pecorino and pepper and season with salt.

Chestnut noodles are ready, serve them immediately!
