Skillet Harissa Turkey Meatloaf

Making meatloaf in the skillet is perfect for busy weeknights – it’s ready in less than 30 minutes!

I took my basic turkey meatloaf recipe[1], swapped the ketchup for jarred Mina Harrisa (or you can use homemade), added shredded zucchini and made them in the skillet. The results were juicy, quick, delicious round meatloaves with a little kick! I served it with a simple chopped cucumber and tomato salad which I tossed with a little olive oil, fresh lemon juice, salt and pepper.

You can purchase Mina Harissa[2] on Amazon[3] and I think Whole Foods carries it, it’s a bright red Moroccan condiment that can be used with couscous, vegetables, meats or whatever you want. You can also make it from scratch which I often do, but for this recipe, Mina was perfect.

If you prefer to make this in the oven as a large loaf, you can! Bake it at 350°F for 1 hour.

Ingredients:

  • 1/2 cup grated zucchini, all moisture squeezed dry with paper towel 
  • 2 tbsp onion, minced 
  • 2 tbsp diced red pepper
  • 3 cloves crushed garlic
  • 1/2 cup whole wheat seasoned breadcrumbs (use plain for dairy free)
  • 1/4 cup Harissa (such as Mina) 
  • 1 large egg 
  • 1 tsp sweet paprika
  • 1 tsp kosher salt
  • 1.3 lb 93% lean ground turkey
  • 1 1/2 tbsp Harissa Sauce for topping 
  • 1 1/2 tbsp ketchup

Directions:

In a large bowl, mix the zucchini, onion, garlic, red pepper, breadcrumbs, 1/4 cup Harissa, egg, paprika and salt. Add the turkey and combine until mixed through.

Form the meat into 5 round patties.

Combine the remaining 1 1/2 tbsp Harissa with the ketchup in a small bowl.

Heat a large skillet over medium. Spray with oil and cook covered until cooked through, about 6 to 8 minutes per side, reducing the heat if they start to get too browned. Brush the Harissa-ketchup mixture on top during the last few minutes of cooking.

We’ve had a lot of rainy days lately and I have been in the mood to make slow simmered soups, stews, and sauces. I decided to make some pasta for dinner one night so I grabbed some ground turkey from the store and the rest of the ingredients out of my fridge and pantry to make this sauce. It smelled unbelievably good while it simmered in the oven all afternoon. I loved the flavor and texture of this sauce and it tasted fantastic on whole wheat spaghetti. My son and I gobbled it right up. My husband also liked it but thought it would be even better if it was spicier. My daughter doesn’t care fpr pasta so she wasn’t a huge fan. I had plenty of sauce leftover so I put it in a zip lock freezer bag and froze it for another rainy day.

Preheat the oven to 300 degrees.

Heat the olive oil in a large Dutch oven over medium heat.  Add the ground turkey, turkey Italian sausage removed from casings, and the onion.  Cook, stirring often to crumble the beef and sausage, for 4-5 minutes.   Add the carrots, garlic, dried basil, crushed fennel seeds, dried oregano, crushed red pepper flakes, sea salt and freshly cracked pepper, to taste.  Add the chicken stock, tomato paste, crushed tomatoes, and the tomato sauce to the turkey mixture as well as the sugar.  Stir until well combined.  Cover with a lid and place into the oven for 3-4 hours.

Remove the Dutch oven from the oven.  Skim the surface for any fat.  Add the chopped basil then taste and re-season if needed.  Cook the spaghetti noodles per instructions, drain.  Serve the sauce on top of the spaghetti then top with Parmesan and fresh parsley if desired.

Ingredients:

2 tsp olive oil
1 lb of ground turkey
2 turkey Italian sausages, removed from casing
1 small sweet yellow onion, diced
3 small carrots, diced
6 cloves of garlic, minced
1 tsp dried basil
1 tsp fennel seeds, crushed
1/2 tsp dried oregano
1/2 tsp crushed red pepper flakes (more if you want it extra spicy)
Sea salt and freshly cracked pepper, to taste
1 cup of chicken broth
1 6oz can of tomato paste
2 15 oz cans of tomato sauce
29 oz can of crushed tomatoes
1 tbsp sugar
2 tbsp fresh basil leaves, chopped
Spaghetti, cooked per instructions (I used whole wheat)
Parmesan Cheese
Parsley, chopped

Asian Turkey Meatballs With Lime Sesame Dipping Sauce

These Asian inspired meatballs are out of this world! Made with ground turkey, ginger, scallions, cilantro and sesame oil with a wonderful tangy sesame-lime dipping sauce. You can make them for dinner or serve them as an appetizer by making them half their size and setting out toothpicks for dipping into that delicious sauce.

I first posted these meatballs back in 2010 and the quickly became a fan favorite! Often I served them with brown rice or Asian “fried” brown rice[1], but lately I’ve been on a zoodle (zucchini noodle) kick and made them for dinner this week served over these zucchini noodles for a low-carb meal and they were fantastic!

To make the zucchini noodles, you’ll need a spiralizer (I love my Paderno Spiral Vegetable Slicer[2]or a mandolin fitted with a julienne blade. You can see my Italian Zoodles and Meatball recipe here[3] for more detailed instructions if you wish to make this as a side, the only difference was here I used sesame oil to cook the zucchini.

Ingredients:

  • 1/4 cup panko crumbs
  • 1-1/4 lbs 93% lean ground turkey
  • 1 large egg
  • 1 tbsp ginger, minced
  • 1 clove garlic, minced
  • 1/2 tsp kosher salt
  • 1/4 cup chopped fresh cilantro
  • 3 scallions, chopped
  • 1 tbsp low sodium soy sauce
  • 2 tsp sesame oil

For the Dipping Sauce:

  • 3 tbsp reduced-sodium soy sauce
  • 1 1/2 teaspoons sesame oil
  • 1 1/2 tbsp fresh lime juice
  • 1 1/2 tbsp water
  • 1 tbsp chopped fresh scallion

Directions:

Preheat oven to 500°F.

In a large bowl combine the ground turkey, panko, egg, salt, scallions, ginger, cilantro, 1 tbsp of the soy sauce and 2 tsp sesame oil. Gently mix with your hands until combined well. Shape meatballs 1/4 cup in size and transfer to a baking sheet. Bake until cooked through and browned, about 15 to 18 minutes.

For the dipping sauce: mix the lime juice, water, soy sauce, and remaining 2 teaspoons of oil in a bowl. Add the scallions and set aside.

Transfer the meatballs to a serving dish. Stir the sauce, then drizzle the meatballs with a little of the sauce. Serve the meatballs with the remaining sauce on the side.

Makes 12 meatballs.
