Halloween Fun ~ Dracula?s Dentures

Halloween Fun ~ Dracula’s Dentures

by Pam on October 25, 2012

I recently made a fun and festive dinner for my kids in celebration of Halloween.  I made Hot Dog Mummies[1] for dinner alongside the Creepy Smiles[2] and Carrot Fingers[3] – needless to say, this meal was a huge hit with my kids.  For dessert, I made these Dracula’s Dentures that I found on The Girl who Ate Everything[4]. I think these cookies are best when made to order so the marshmallows and cookies don’t get stale. Both of my kids were delighted with the dessert and said they tasted AMAZING!

Make the chocolate chip cookies[5] – see recipe here[6].

Once the cookies have cooled, cut them in half.  Spread a bit of red frosting on the bottom of both cookie halves.  Place the mini marshmallows around the front of the bottom cookie.

Carefully place the top cookie half on top of the marshmallows.  Carefully insert the almond slivers in between teeth for fangs.  Serve immediately.  Enjoy.

Baked Spaghetti with Ricotta

Baked Spaghetti with Ricotta

by Pam on October 11, 2012

I found this recipe on Cinnamon Spice & Everything Nice[1]  and had to make it immediately   I loved the idea of baking spaghetti with a layer of ricotta then topped with mozzarella, olives, and tomato slices.  It was fun to make and smelled amazing while it baked.  It was flavorful and delicious!  We all loved it, even my daughter who doesn’t like cheese, liked it.  I am excited to eat the leftovers for lunch tomorrow.

Preheat the oven to 400 degrees.  Coat an 8 inch baking dish with cooking spray.

Cook the spaghetti in salted water, per instructions.

While the pasta is cooking, combine the ricotta cheese, basil, minced garlic, egg, Parmesan cheese, sea salt, and freshly cracked pepper, to taste.  Mix well until thoroughly combined.

Drain the pasta then place it back into the pot it was cooked in.  Add the spaghetti sauce and mix until evenly coated.  Place half of the spaghetti into the baking dish.  Spoon the ricotta cheese on top of the spaghetti and leaving an inch border around the edges.

Cover the ricotta mixture with the remaining spaghetti.  Sprinkle the top with mozzarella cheese, olives, and tomato slices.  Season the tomatoes with sea salt and freshly cracked pepper, to taste then sprinkle with a bit of Parmesan cheese.

Place into the oven and bake for 25-30 minutes.  Remove from the oven and let it cool for 5-10 minutes before slicing and serving.  Enjoy.

Gordon Ramsay’s New Potato Crab Salad

Gordon Ramsay’s New Potato Crab Salad Recipe

Gordon serves a tasty crispy salmon [1]filet over this New Potato Salad. Give both a try, and enjoy a gourmet meal which doesn’t take a ton of time to cook.

Ingredients:

  • 7-9 Boiled New Potatoes (peeled)
  • Olive Oil
  • 4-5 Green Onions
  • Salt & Pepper
  • Vinaigrette (see note at end of article)
  • 1/4 cup Chopped Parsley
  • 1/2 pound of Crab Meat

Directions:

Heat olive oil in a large sauce pan. Add the boiled, peeled, New Potatoes to the olive oil and cook briefly to lightly heat the potatoes. Remove from heat, and crush the potatoes with a fork. You don’t want to thoroughly mash them at this point, just crush them up a bit.

Chop the green onions, using the entire onion (top and bottom) and add to potatoes. Season the potatoes lightly with salt and pepper, add the crab meat, and mix everything together. Add a healthy amount of vinaigrette dressing, and then the chopped parsley. Mix everything again, and you’re done! Serve with Crispy Salmon [2] for a complete meal, or use your favorite main course to add your own flair.

Note: Gordon Ramsay says during the video that the vinaigrette he uses in all his restaurants consists of olive oil, water, lemon juice, and salt and pepper. He doesn’t specify and ratios, but you can experiment if you’d like to use the same vinaigrette as him.
