Roasted Grape Tomatoes and Zucchini Topped with Feta and Chives

Roasted Grape Tomatoes and Zucchini Topped with Feta and Chives

by Pam on April 29, 2013

I wanted a simple, healthy, and quick side dish to pair with the chicken and orzo I was making for dinner. I grabbed a zucchini and a container of grape tomatoes along with some feta and chives. I simply roasted the seasoned veggies for 15 minutes then topped them with fresh chives and feta cheese. My kids don’t care for zucchini so they weren’t impressed with this side dish. My husband and I, on the other hand, both loved it and thought it paired nicely with the rest of our dinner.

Preheat oven to 350 degrees. Coat a small baking dish with cooking spray.

Place the grape tomatoes, zucchini, and minced garlic in the baking dish. Drizzle with olive oil, sea salt, and fresh cracked pepper, to taste. Toss to coat the veggies evenly.

Place into the oven and roast for 15 minutes. Remove from the oven and pour them into a serving bowl. Top with feta cheese and fresh chives. Serve immediately. Enjoy.

Cinnamon Swirl Banana Bread

Cinnamon Swirl Banana Bread

by Pam on June 16, 2013

My kids were having friends over to play so I decided to make them some banana bread. I wanted to try something different and found a recipe for a cinnamon swirl banana bread at Lovin’ From The Oven[1] that looked and sounded delicious. I adapted the recipe a bit by adding cinnamon, cloves, and nutmeg to the batter. It was quite easy to make and made my house smell absolutely incredible while it baked. I served the bread with a big plate of fresh fruit for a tasty and fun afternoon snack that all of the kids loved.

Preheat the oven to 350 degrees. Coat a small loaf pan with cooking spray.

Mix the mashed bananas, butter, sugar, egg, and vanilla together with a beater until creamy.

Combine the flour, baking soda, cinnamon, cloves, nutmeg, and salt together in a separate bowl then mix well. Gently add the flour mixture into the banana mixture until just combined. Don’t over mix.

Mix together the 1/3 cup sugar and 1 tablespoon of cinnamon.

Add half of the batter to the loaf pan and then sprinkle more than half of the cinnamon-sugar mixture all over the batter in the pan.

Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.

Bake for 55-65 minutes, or until a tester inserted into the center comes out clean. Remove from the oven then let it cool for a few minutes before transferring to a cooling rack to finish cooling. Slice and serve with butter if desired. Enjoy.

Shrimp Skewers with Garlicky Parmesan Orzo

Shrimp Skewers with Garlicky Parmesan Orzo

by Pam on October 15, 2013

I saw this recipe online at Lisa’s Dinnertime Dish[1] that looked super easy to make and something my entire family would love. I was right. The shrimp were simply seasoned with olive oil, minced garlic, sea salt, and freshly cracked pepper. I cooked them in my grill pan for a few minutes before serving them on top of some garlicky parmesan orzo. A simple and easy weeknight meal that was comforting and delicious. My daughter said the orzo had too much Parmesan but other than that it was a big hit with my entire family.

Place the olive oil and minced garlic in a zip lock bag with the shrimp. Toss to coat evenly then seal and place into the  refrigerator for at least 1 hour. Remove the shrimp from the bag and skewer them. Place on a plate and season both sides with sea salt freshly cracked pepper, to taste.

Prepare the orzo per instructions. Drain. In the same pot you cooked the orzo, place the butter in the pan over medium heat. Add the garlic and crushed red pepper flakes then cook, stirring constantly for 30 seconds. Add the drained orzo to the pot and stir until evenly coated. Add the Parmesan and fresh parsley then season with sea salt and freshly cracked pepper, to taste. Stir until mixed well. Taste and re-season if needed.

Heat a grill pan over medium heat. Coat the pan with cooking spray.  Add the shrimp skewers to the hot grill pan and cook for 2-3 minutes on each side, or until pink and cooked through. Don’t overcook.

Ladle the orzo into a bowl then top with one to two skewers. Serve immediately. Enjoy.
