S’mores brownies

Brownies are a great American chocolate cake with their rich gooey texture. Add some crushed digestives for crunch and cover them in marshmallow and chocolate chips for added sweet stickiness. These brownies are perfect warmed up and shared with the rest of your family. Serve with ice cream for a sweet finish. Store these brownies in an airtight container and eat within two days for the best flavour.

Ingredients

  • 6x digestive biscuits
  • 150g dark chocolate
  • 130g butter or margarine
  • 100g light brown sugar
  • 130g plain flour
  • ½tsp baking powder
  • 2 eggs

For the topping:

  • 3tbsp marshmallow spread such as fluff
  • 60g melted chocolate

Spread with marshmallow before they have completely cooled so it turn into a runny sweet sauce.

Method

  1. Preheat oven to 170°C/325°F/Fan 150°C/Gas Mark 3. Grease a 20cm square tin
  2. Place the Digestives into a plastic sandwich bag and crush with a rolling pin. Set to one side
  3. Break the chocolate and place it in a bowl with the butter
  4. Place the bowl over a saucepan of simmering water, ensuring the button of the bowl doesn’t touch the water
  5. Allow the chocolate and butter to melt, stirring continuously
  6. Remove from the heat and stir in the sugar
  7. Sift the flour and baking powder together, and stir through the mix. Add the eggs and mix through
  8. Gently stir through the crushed biscuits and pour the mix into the tin
  9. Bake for 35 to 45 minutes or until the top is flaky and crunchy, but is still soft when pressed gently
  10. Remove from the oven and allow to cool before removing from the tin
  11. When cool spread over the marshmallow spread and drizzle with melted chocolate

I had very ripe bananas to use up so I went in search of a fun new banana bread recipe to try out.  I adapted a recipe from Alida’s Kitchen[1] that looked too incredible to resist.  It made my house smell incredible while it baked and it turned out moist, beautiful, and so delicious.  My kids thought it was the BEST banana bread ever & gobbled up the whole loaf within two days.

Preheat oven to 350 degrees.  Spray a loaf pan with cooking spray and set aside.

Combine the flours, baking soda, and salt together in a small bowl.

In a separate bowl, beat the sugars and oil with a mixer until creamy and smooth.  Add the mashed banana, eggs, buttermilk, and vanilla then beat until blended.  Gently fold the flour mixture into the banana mixture and mix batter until just combined.

Place chocolate chips in a medium microwave-safe bowl and microwave for 30-40 seconds or until almost melted.  Stir until smooth (cook for a few more seconds if it’s not completely melted).

Add 1 cup batter to the chocolate, stirring until well combined. Spoon batter into prepared loaf pan, alternating between plain batter and chocolate batter.  Swirl batters together using a knife.  Place additional chocolate chips on top, if desired.

Bake for 70 minutes, or until a tester inserted in the center comes out clean.  Cool 10 minutes in pan before removing from pan to wire rack to cool completely. Slice and serve.  Enjoy.

1 1/2 cups flour
1/2 cup of whole wheat flour

A wholesome bake with a touch of naughtiness and a sweet nutty flavour. Deliciously sticky and quick to make, these tasty flapjacks make the perfect afternoon tea treat. You can also use smooth peanut butter if preferred

Ingredients

  • 300g butter or margarine
  • 200g demerara sugar
  • 100g golden syrup
  • 100g crunchy peanut butter
  • 450g porridge oats
  • 1tsp vanilla extra
  • Icing sugar to dust

Try adding a handful of chocolate chips or some sultanas to the mixture with the oats for extra sweetness.

Method

  1. Pre-heat oven to 190°C/375°F/Fan 170°C/Gas Mark 5. Grease and line a 30 x 20cm rectangular cake tin with baking parchment.
  2. Melt the butter in a large saucepan then add the sugar, syrup and peanut butter and stir over a low heat until smooth.
  3. Remove from the heat and stir in the oats and vanilla and mix well. Pile into the tin and pack down well. Bake for 25 mins until lightly golden. Cool for 10 mins before marking into 20 bars using a sharp knife. Leave to cool completely before removing from the tin.
  4. To serve, dust lightly with icing sugar. Store in an airtight container for up to a week.
