Chocolate Peppermint Cookies

My daughter didn’t want a cake or cupcakes for her 10th birthday. Instead she wanted chocolate and peppermint cookies. I found this recipe on Tasty Kitchen[1] that looked perfect. The house smelled amazing while these cookies baked and they put a huge smile on the birthday girl’s face.  The peppermint frosting and candy cane crumbles made these chocolate cookies extra special. They turned out rich and decadent which is perfect for my chocolate loving daughter who absolutely LOVED them. Happy birthday to the sweetest girl I know. Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat.

Combine the flour, cocoa powder, baking soda and salt together in a small bowl – mix well.

Using a mixer, beat the butter and sugars together until creamy and smooth. Add the egg, vanilla, and peppermint extract and mix well with beater. Slowly add the flour mixture to the butter mixture until combined. Add the chocolate chips and the pieces of crushed candy cane; mix until combined.

Place teaspoons of dough on the baking sheet about 2 inches apart. Press the cookies with the back of the spatula to flatten them a bit. Place into the oven and bake 7-8 minutes; remove from the oven and let them cool for a few minutes before moving them to a wire rack.

Make the glaze by combining the powdered sugar, peppermint extract, and milk; mix until well combined. Drizzle the frosting over the cookies on the wire rack. Side Note: Place wax paper or a paper towel down under the rack for a quicker clean up. Sprinkled the crushed candy cane over the top of each cookie before the frosting sets. Enjoy!

Ingredients:

Cookies:

1 cup + 2 tbsp flour
1/3 + 2 tbsp cup unsweetened cocoa powder
1/2 tsp baking soda
1/8 tsp salt
1/2 cup unsalted butter, softened
1 cup brown sugar
1/3 cup + 2 tbsp white sugar
1 egg
3/4 tsp vanilla extract
1/4 tsp peppermint extract
1 cup semi-sweet chocolate chips
2 candy canes, crushed

Peppermint Glaze:

3/4 cups powdered sugar
1/4 tsp peppermint extract
3 1/2 tsp milk or half-and-half
Candy canes, crushed

Directions:

… someone is using my kitchen! The kids decided to take matters into their own hands and make themselves a big batch of cookies. They chose to make cookies with coconut, white chocolate chips, and milk chocolate chips. They used this recipe[1] and just substituted 1/2 cup of chocolate chips for white chocolate chips and omitted the almonds. They cranked up the pop music (sigh, the things we do for our children) and got ready to bake while I snapped a few pictures. They ended the afternoon by eating a freshly baked cookie while doing homework. The cookies look amazing and the whole family tells me they are extra delicious – probably because the kids put so much love into them!

A quick note to say THANK YOU for all of the wonderful e-mails and comments you have sent my way. I am so thankful for all of your positive thoughts and kind words. I have been getting my back and muscles worked on a lot this week and I am definitely feeling so much better thanks to Dr. Scherer at Back in Motion. It’s a slow & painful process but I am on my way back to normal. I am hoping to try cooking this weekend.  See you soon….

Dark Chocolate and Raspberry Stuffed Crescent Rolls

I surprised my kids with these tasty treats after school last week. They were fun & easy to put together, smelled absolutely amazing while they baked, and needless to say, put a HUGE smile on my kids’ faces. They said they were “the best things ever”and “totally blog worthy”.  The raspberries and melted chocolate made a sweet surprise in the center and they both loved the flavor combination. Super quick, super simple, and super tasty – you can’t beat that!

Preheat the oven to 375 degrees. Line a baking sheet with a silpat mat.

Unrolled the crescent dough into individual triangles. Place a few raspberries and chocolate chips at the wide end of one triangle. Carefully roll the dough, starting from the wide end towards the small end. Wrap the left & right side up so they enclose the crescent roll – this will keep the chocolate and raspberries from leaking out. Repeat.

Place into the oven and bake 12-13 minutes or until golden brown.

While the crescent roll’s are baking, melt the remaining chocolate chips in a glass dish in the microwave for 30 seconds. Remove and stir then cook for another 20 seconds; remove and stir until the remaining chips melt. DO NOT OVERCOOK. Spoon the melted chocolate into a small zip lock bag.

Remove the crescents from the oven and place on a cooling rack. Cut a super small hole in the corner of the bag and drizzle the chocolate back and forth over each crescent roll. Serve with a glass of milk & enjoy.

3/4 cup semi-sweet chocolate chips
