These delicious breads are traditionally stuffed with a fruit and nut mixture then baked quickly in a tandoor oven – an Indian clay oven that reaches very high temperatures. They will cook just as well in a hot domestic oven but make sure they are placed on a preheated baking sheet so they start to puff up immediately (slow cooking will make them tough and leathery). They are best eaten warm from the oven brushed with melted butter or ghee and with a sprinkling of fresh chopped coriander if liked.

Take care when rolling out the stuffed dough balls as you don’t want the filling to burst out. Use a gentle rolling action and flour the surface well to prevent the dough sticking.

Ingredients

  • 350g strong bread flour
  • 7g sachet easy-bake or fast action dried yeast
  • 1tsp salt
  • 150ml natural yogurt
  • Approx 150ml hand-hot water
  • Melted butter or ghee, to serve

For filling:

  • 25g sultanas or raisins
  • 25g desiccated coconut
  • 25g flaked almonds or pistachios

Method

  1. Mix the flour, yeast and salt in a large bowl. Stir in the yoghurt and enough water to mix to a soft dough. Knead on a lightly floured surface for 5 mins until smooth and elastic.
  2. Place the dough in a lightly oiled bowl and cover with a clean tea towel. Leave in a warm place for about 1 ½- 2 ½ hrs or until the dough has doubled in size.
  3. While the dough is rising, place the filling ingredients in a food processor or blender and process to a coarse paste.
  4. Preheat the oven to 220°C/425°F/Gas Mark 7. Place a heavy-duty baking sheet in the oven to heat up.
  5. Divide the dough into 6 pieces and roll each out to a circle. Place a spoonful of the filling in the centre of each circle then pull the edges together to enclose the filling and pinch tightly to seal. Shape into a ball then roll each ball out to a thin oval shape.
  6. Quickly place the naans on the hot baking sheet and bake for 7-8 mins until puffy and with brown spots in places. Serve immediately brushed with melted butter or ghee.

Hazelnuts, white chocolate and pumpkin spices are the perfect combination for these crispy “adult” cookies. Biscotti is an Italian crescent shaped cookie that is twice baked and perfect for dunking into coffee, tea or even milk.

If you have electricity and a warm oven to bake these in today, take a moment to be thankful and think about the hundreds of thousands who do not.

It’s Sunday, day seven of no electricity for many of us on the South Shore of Long Island, Staten Island, Brooklyn and New Jersey. It’s getting cold outside and gas has been very hard to come by, but I am fortunate I was able to stay at my Mom’s last night. 

I am thankful for my family, the roof over my head and hot food to eat and so sad for those around me who lost everything. I donated clothing, donated to the Red Cross, and plan on doing more once my power is restored and I can get gas.  The way I see it, I can’t help everyone, but if everyone helps one person they will be in much better shape. Hope you all have a warm Sunday with your loved ones and be thankful for the little things we take for granted.

Ingredients:

  • 2 cups all purpose flour (+ more for dusting)
  • 2 1/2 tsp pumpkin pie spice
  • 1-1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of salt
  • 2 1/4 oz (1/2 cup) crushed hazelnuts
  • 1/2 cup white chocolate chips
  • 2 tbsp unsalted butter, softened
  • 3/4 cup superfine sugar (you can put sugar in food processor)
  • 2 tbsp pure canned pumpkin
  • 2 large eggs
  • 1 tsp vanilla extract

Directions:

Preheat oven to 375°. Line a baking sheet with a silpat or parchment paper.

In a medium bowl, combine flour, baking powder, cinnamon, nutmeg and salt. Add hazelnuts, white chocolate chips and mix.

In a stand mixer, mix butter and sugar on medium speed for 1-1/2 minutes. Add pumpkin, vanilla and eggs, one at a time. Add the dry ingredients and mix on low speed until just combined to make a dough.

Remove the dough (if too sticky sprinkle flour over it and on work surface). Divide into two pieces and form into long flat logs about 12 inches long x 2 inches wide.

Place on the lined baking sheets and bake 22-25 minutes.

When cool enough to handle, gently cut the loaves on the angle into 1/2 inch slices (a serrated bread knife works best).

Return to the baking sheet fitting as many as you can on the baking sheet, you may need to do this in batches. Bake the biscotti for another 3-4 minutes on each side, less if you like it softer.

Makes 28-30.

Our good friend Jake gave us some halibut he caught while in Alaska.  This recipe was inspired by my mother in law Fran who makes the best halibut!  She normally marinates the fish in an Italian dressing but since I didn’t have any on hand I just used lemon, olive oil, sea salt, and freshly cracked pepper.  I then tossed some panko crumbs with Parmesan, fresh parsley, garlic powder, salt and pepper then coated the fish in it.  I air baked it on high heat until it was flaky and tender on the inside and crunchy on the outside.  It was truly one of the best halibut dishes I have ever had.  The fish was fresh and delicious and the Parmesan panko topping made it extra special.

Drizzle the olive oil and lemon juice over both sides of the fish then season both sides with sea salt and freshly cracked pepper, to taste.

Line a baking sheet with tin foil.  Place a cooling rack on the baking sheet.  Coat with cooking spray. Side Note:  Cooking the fish on the rack will allow the fish to be crispy on both sides without flipping it over while cooking.

Combine the panko crumbs, Parmesan cheese, fresh parsley, garlic powder, sea salt, and freshly cracked pepper, to taste together on a plate.  Dip the halibut in the panko mixture until evenly coated. Place the coated fish on top of the cooking rack.

Place the baking sheet into the refrigerator for 20-30 minutes.  Side Note: This step will ensure the panko coating will stay on the fish.  

Preheat the oven to 450 degrees.  Spray the top of each piece of fish with olive oil cooking spray. Place the baking sheet with the fish into the oven and cook for 15 minutes or until the fish is cooked through and flaky.  Remove from the oven and serve with a lemon wedge.  Enjoy.

Parmesan-Panko Crusted Halibut




Yield: 2-4

Prep Time: 10 minutes plus 20 minutes in the refrigerator

Cook Time: 15 min.

Total Time: 45 min.



Ingredients:

2 halibut fillets, skin remove
1 tbsp olive oil, divided
1/2 lemon juice
Sea salt and freshly cracked pepper, to taste
