Oven Baked French Fries

One of my very favorite cookbooks is called The New Best Recipe (from the editors of Cook’s Illustrated). I always find the best recipes in there. I wanted to serve fries with the Grilled Chicken Sliders with Avocado[1] but I didn’t want to fry them because we are trying to eat healthier. I found a great recipe in this cookbook that I used less oil but other than that did it exactly as written. I left the fries in for a little too long due to helping out with a homework problem but they still turned out amazingly delicious. They were crisp on the outside and soft and delicious on the inside. I served these fries with fry sauce (a mixture of ketchup & mayonnaise) alongside the sliders for a fun and delicious meal without all of the guilt!

Peel the russet potatoes then cut each potato lengthwise into same size fries. Place the cut fries into a large bowl and cover with hot tap water.

Adjust the oven rack to the lowest position. Preheat the oven to 475 degrees. Line a heavy-duty baking sheet with tin foil then drizzle two tablespoons of oil on the tin foil followed by a sprinkling of sea salt and freshly cracked black pepper, to taste. Set aside.

Drain the potatoes then place on kitchen towels (or paper towels) and pat dry. Rinse and wipe out the bowl then dry it with a kitchen towel. Place the dried fries back into the dry bowl then drizzle the last tablespoon of oil onto the fries.  Toss with your hands until evenly coated. Arrange the fries in a single layer on the prepared baking sheet. Season with sea salt and freshly cracked pepper, to taste.

Cover the baking sheet tightly with tin foil and place into the oven to bake for 5 minutes. Remove the foil and continue to bake until the bottoms are spotty golden brown, about 15-20 minutes, rotating the baking sheet after 10 minutes. Using tongs, flip each fry, keeping the potatoes in a single layer. Continue baking until the fries are golden and crispy, 5-10 minutes longer, rotating the pan as needed if the fries are browning unevenly.

Transfer the fries to some paper towels to drain. Serve immediately.  Enjoy.

Ingredients:

I just found my new favorite salad. This may not be a traditional Cobb Salad because  I used turkey breast instead of chicken and feta cheese instead of blue cheese, but that’s what I had on hand, so that’s what I used. It was hearty and filling without making me feel stuffed. I used Fran’s Vinaigrette and it topped this salad perfectly!

Place the romaine lettuce and mixed greens in the bottom of a salad bowl. Arrange the onion, turkey, tomato, feta cheese, carrots, bacon, hard boiled egg, and avocado in rows across the lettuce. Serve immediately with Fran’s Vinaigrette or dressing of your choice on the side. Enjoy.

Cobb Salad




Yield: 1

Total Time: 10 min.



Ingredients:

1 cup of romaine lettuce
1 cup of mixed greens
2 slices of turkey breast, diced
1 slice of bacon, cooked & crumbled
1/4 avocado, diced
5 grape tomatoes, sliced
1 tbsp feta cheese
2 tbsp carrots, shredded
1 hard boiled egg, sliced
1 tbsp red onion, sliced
Fran’s vinaigrette (or dressing of your choice)

Directions:

These bite sized pecan tarts are the perfect “skinny” replacement for pecan pie this holiday season! They are so easy to make, and really good!

Traditional pecan pie can set you back about 480 calories! These mini tarts, are only 68 calories each, even if you eat two you are still ahead of the game! I found this neat Thanksgiving calorie counter[1] that totals your calories and tells you how many miles you need to walk to burn them off.

I’m in a bit of a panic that Thanksgiving is next week! Losing power for two weeks really set me back and quite honestly, after a few days of dealing with long gas lines, no power, no traffic lights, no supermarkets, no school, no gym, I really started to lose track of time (I think I need a vacation).

Pecan pie has been requested quite a bit, so when I stumbled on these mini pecan tarts, I thought I would try them with some minor tweaks.

I  loved how they turned out and they are so stinking easy, even a beginner baker can make them. If you’re in charge of dessert this Thanksgiving, give these a try, you can double the recipe to make 30.

Mini Pecan Phyllo Tarts

Ingredients:

  • 1 tbsp butter, melted
  • 1 large egg
  • 4 tsp brown sugar
  • 2 tbsp honey
  • 1/4 tsp vanilla
  • 1/2 cup pecans chopped
  • 15 Mini Phyllo Shells (Athens)

Directions:

Preheat oven to 350°F.

In a medium mixing bowl, combine all ingredients except pecans. Mix well. Stir in chopped pecans. Arrange mini shells on a baking sheet. Fill mini shells with one heaping teaspoon of pecan mixture. If any of the mixture remains, distribute evenly between all the shells.

 Bake for 10-15 minutes. Let them cool before serving.
