Pasta alla Norma available on our menu is an interpretation of Giovanni Rota, Executive Chef of La Scuola de La Cucina Italiana, and is designed to best preserve the characteristics of the dish. The ingredients are traditional: tomato, eggplant, salted ricotta and macaroni, but the preparation makes the difference.
«Tomato sauce is a combination: we combine a ready-made sauce (the classic one prepared with peeled tomatoes) and pachino tomatoes, so as to give two consistencies and two different acidities to the preparation. The lightly floured aubergines are fried until golden and crispy and added to the dish only at the last moment. "
