Pie with buckwheat and apples, preparation
1) Warm up the oven at 180 °. Work to foam butter with powdered spices, fine brown sugar, honey and a pinch of salt. Apart from slam lightly the eggs with the milk, then incorporate them to the butter mixture, a little at a time. Also add the sifted flours with the baking powder and mix with a spatula.
2) Cover the bottom of a springform mold from 26 cm in diameter with a sheet of parchment paper cut to size, grease and flour the edge, then pour the dough, leveling it with the back of a spoon.
3) Rinse apples, dry them and engrave them with many parallel and deep cuts, without opening them. Drown the apples 3/4 in the dough and bake for about 50 minutes (check the cooking with the toothpick test).
4) Leave completely cool down the cake before turning it out; before serving, brush the surface with maple syrup and sprinkle with brown sugar.
