Tacos: let's do them at home! – The Italian kitchen – Italian Cuisine


The tutorial to prepare delicious tacos at home in a few steps, starting from corn flour, water, oil and salt

Do you want tacos? No problem!
During this quarantine period, we have given up on many of our favorite foods that we used to eat outside the home. Or we learned to do it. In order not to miss anything, but also for learn new techniques and feel proud of our results in the kitchen. If you haven't tried Mexican recipes yet, this is the right time to do it!
Our stylist Beatrice Prada in fact, he cooked some delicious tacos showing us all the single passages with the photos of Giandomenico Frassi. Follow the tutorial below and you won't go wrong!

How to make tacos

100 g white corn flour (masa harina)
150 g water
1 teaspoon of oil
a pinch of salt

Method:

Prepare the flour in a large bowl, heat the water without bringing it to the boil and salt it. Then pour it on the flour, add the oil and mix with a spoon or spatula until the mixture is plastic and the water will be completely absorbed. Leave to stand covered for 15/20 minutes.

Cut two baking paper disks of the same diameter as the tortilla press (about 13 cm), divide the dough into six balls and with the aid of the tool or a rolling pin, crush one ball at a time between the two sheets of paper, until they are reduced to the thickness of two three millimeters.


Cook on a very hot plate two minutes per side and, once cooked, fill to taste.

Beatrice's tacos are stuffed with salad, tomatoes, pulled pork, spring onion, curry mayonnaise, paprika yoghurt sauce and coriander.

First separate the yolks and egg whites and whip the first with sugar, vanilla and salt, then add the melted butter and then sifted flour, cocoa and yeast.

Separately, beat the egg whites until stiff stiff.

Then gently incorporate the egg whites, stirring with a movement from the bottom upwards.

Cover a baking tray with parchment paper, then spread the mixture by spoonfuls, creating circles of about 12 cm in diameter well spaced apart.
Then cook in a preheated convection oven at 180 ° C for about 6-8 minutes.
Once out of the oven, immediately turn them upside down on a second sheet of parchment paper and gently remove the old sheet, then fold the discs in half, always using the parchment paper, and let them cool.

In the meantime, whip the cream with the vanilla and, when the disks are completely cold, open them gently and decorate with the cream.

The chocolate tacos are ready, serve them immediately.
