Oatmeal and honey cake

This hearty, oaty cake could not be easier to make. Using store cupboard basics, it costs just 26p per slice – a cheap treat for all the family.

Top tip: Try adding some chopped walnuts to the oat topping for an extra crunchy texture.

Ingredients

  • 300g butter
  • 100g honey
  • 150g oats
  • 50g medium oatmeal
  • 100g light brown muscovado sugar
  • 150g self-raising flour
  • 4 medium eggs, beaten

Method

  1. Preheat the oven to 180°C (gas mark 4). Grease and base line a 20cm round loose-bottomed cake tin.
  2. Melt 100g butter with the honey and add the oats.
  3. Mix together the oatmeal, sugar and flour in a large bowl. Melt the remaining butter and stir into the dry ingredients with the eggs. Pour into the cake tin.
  4. Sprinkle the oat mixture on top and bake for 45-50 mins or until golden and a skewer inserted comes out clean.
  5. Serve warm with a drizzle of honey.

This classic African-style chicken stew, made by goodtoknow user Anna Hales, is oozing with spicy flavour. Packed full of tender chicken, sweet red peppers and smooth peanut butter, this tasty dish is perfect if you fancy feeding the family something a little different

Not a fan of spice? Leave out 1tsp tabasco sauce and replace with tomato ketchup instead.

Ingredients

  • 3 onions
  • 2 cloves garli, chopped
  • 3 tbsp fresh ginger grated
  • 3 tsp cumin
  • 3 tsp ground coriander
  • 1tsp tabasco sauce
  • 1 can chopped tomatoes
  • 500ml chicken stock
  • 200g smooth peanut butter
  • 10 chicken drumsticks
  • 2 red peppers, chopped
  • 2 sweet potatoes, chopped
  • Bunch fresh coriander, chopped
  • Lime wedges to serve

Method

  1. Slice the onions finely and fry for around 5 mins until soft. Add the garlic and all the spices and cook for a further 2 mins.
  2. Add the chopped tomatoes, stock and the peanut butter and stir until the peanut butter is mixed in well.
  3. Add the drumsticks and simmer for 30 mins, stirring regularly.
  4. Add the red peppers and the sweet potatoes and cook until the potatoes are soft.
  5. Stir in the chopped corriander. Serve with rice and a wedge of lime.

This quick and easy stewy soup is surprisingly filling, plus the low cost ingredients make it great value if you’re feeding a crowd. Winter comfort food doesn’t get much better than these combination of flavours; the deeply smoked paprika and fiery chilies in the Spanish pork chorizo give the soup a real kick, that’s subtly offset by the creaminess of the chickpeas and potatoes (make this soup even spicier by adding a sprinkling of dried chilli flakes). If you’ve got time on your hands then use dried chickpeas and soak them in a bowl of cold water overnight.

For an authentic Spanish finish garnish the soup with chopped boiled eggs.

Ingredients

  • 1 tbsp olive oil
  • 100g chorizo, cut into small chunks
  • 1 onion, diced
  • 1 clove garlic, finely chopped
  • 1 x 400g can of chickpeas, drained and rinsed
  • 500g potatoes, diced
  • 750ml chicken stock
  • Small bunch parsley, leaves only

Method

  1. Heat the olive oil in a large saucepan then add the chorizo pieces and fry for 2 minutes. Next add the onion and garlic and allow to cook for 5 minutes, stirring frequently.
  2. Lastly add the chickpeas, potatoes and chicken stock. Bring to the boil, then reduce the heat and simmer for 20-25 minutes, checking that the potatoes are tender. Season to taste.
  3. Ladle the soup into bowls and serve garnished with parsley.
