Skinny Eggnog Cake

Need an easy dessert to bring to a Holiday party?

This cake is easy and delicious. Simply combine a yellow box cake mix with nutmeg, Chobani, water and egg whites and you’ll have a deliciously light cake ready in no time. Top the cake with some whipped topping spiked with rum or rum extract and dessert is ready!

I used Truwhip[1] as a healthier alternative to Cool Whip, which contains no HFCS, hydrogenated oils, transfats
or GMOs. I heard Trader Joe’s also carries a similar whipped topping if you are lucky enough to have one near you. Happy Holidays!!

Calories: 188 • Fat: 5 g • Carb: 32 gFiber: <1 g • Protein: 2.5 g • Sugar: 4.3 g

Ingredients:

  • 16.5 oz package yellow cake mix
  • 6-oz fat-free Greek yogurt
  • 1 cup water
  • 2 large egg whites
  • 1 1/2 tsp ground nutmeg, plus more for garnish
  • baking spray

For the Rum Topping:

  • 10 oz  Truwhip[2] or reduced fat whipped topping
  • 1 tbsp rum (or a few drops rum extract)

Directions:

Preheat oven to 350°. Lightly spray a 9 x 13 inch baking pan with baking spray.

Combine all the cake ingredients in a large mixing bowl and beat until combined. Pour into prepared baking pan and bake about 28-30 minutes, or until a toothpick inserted comes out clean. Allow to cool before frosting.

For frosting, in a small bowl, whisk whipped topping with rum or rum extract. Spread over cake and dust with more nutmeg. Keep refrigerated if making this ahead OR keep whipped topping in the refrigerator and serve on the side.

Makes 15 servings.

Hope everyone’s Holidays were filled with warmth, good food and great company. I spent my Holidays surrounded by family and friends and feel very blessed.

Santa was also really good to me and got me a Fitbit One[1] which I’m now totally obsessed with, as well as some new workout clothes from Lululemon (I think you see where I’m going with this). I was cooking up a storm in 2013 testing recipes for both my upcoming cookbook while continuing to post new recipes on my blog each week. There were days I didn’t think I would meet my deadline, but I did! The Skinnytaste Cookbook will be out in the Fall of 2014, in the weeks ahead I’ll be involved with some of the more creative aspects of the cookbook &ndash; the photography, book design and cover designs which I’m so excited about.

As a Christmas gift to myself I also signed up for 10 weeks of personal training which I started last month to keep me in check during the Holidays. I love every minute of them and will probably continue doing it once my 10 sessions are up.

I want to express my gratitude to all of you for being such faithful followers and allowing me to do what I love on a daily basis. What a struggle and suffering to lose weight! Here's how some films loved by the general public tell us about it

The parties end, the decorations are dismantled and the pounds remain to be disposed of. The ball of many for the month of January seems to be only one: lose weight, get back into shape after the Christmas and New Year binges, where every whim is forgiven. Beyond the classic tips to lose weight, from a good hydration to the expensive old gym membership that last month was there, on the bedside table to get dust, perhaps to heartened by the daily efforts can come to the rescue some of the most iconic characters of the cinema, who, too, have faced the delicate phase of the diet, but with a degree of desperation much deeper than we could ever have.

The film was The crazy professor, a small cult with Eddie Murphy, but, perhaps, it is a bit too imaginative to be considered an option.

Better body fatigue, perennial nervousness and healthy exercise. A bit like Bridget Jones which, thanks to the break with the handsome Daniel Cleaver, chooses exhausting sessions of exercise bikes up to burst – not metaphorically – of fatigue. Who said that the pains of love are not good for the line? Another small example, but here we speak, rather than a need, a whim, is the tender Olive of Little Miss Sunshine, which will have only seven years, but also the dream of becoming, one day, Miss America. To do this, think well to give up some pleasure, like an ice cream for breakfast. The father is from his own, but the rest of the family just can not see her with a pout and dry mouth and that's why Olive will end up with the yield and immediately hold the spoon: on the other hand the diet at seven years, even if dreams of become an angel of Victoria's Secret, remains an abomination of which it is impossible to be proud.

More terrible, until it reaches madness, it is the Nina Sayers which earned the Oscar to Natalie Portman in 2010 for The black Swan. There, so there was the desire to remain lean, not so much for an ideal, but for the need to be perfect, the ethereal nymph weighing like a feather and that the audience applauds with noise since the last row. In the film there is a scene that explains well the obsession of Nina and the intolerance (yet this mica so stable) of the mother: to celebrate his engagement as Cigno Bianco / Cigno Nero of the show Swan Lake set up by Vincent Cassel, Mrs. Sayers thinks well to celebrate the news with a beautiful cream and strawberries cake. Temptation to which Nina strives not to give in, reproving her mother for a too large slice poured on the plate. The scene borders on madness, the lady does to throw the whole cake in the trash can and only then Nina gives a taste of that cake that is her favorite. And did you think you had some diet problems?
