Crock Pot Maple Dijon Chicken Drumsticks

This is an EASY slow cooker chicken dish made with only 6 ingredients, including the salt and pepper! Kid-friendly and delicious – the chicken literally falls off the bone!

It’s great having friends who love to cook. I get the best ideas from them, and this recipe is the perfect example. My girlfriend Nalini is an excellent cook, and she was telling me about this chicken recipe she made in the oven for her family. Me of course changed the recipe (I just can’t help myself) I removed the skin from the drumsticks, modified the ingredients and adapted the recipe for my slow cooker. Results – AMAZING! Kids, husband, everyone loved it!! I served this with Shredded Brussels Sprouts with Proscuitto from The Skinnytaste Cookbook[1] (which my 4 year old loves) and everyone was happy.

Ingredients:

  • 8 skinless drumsticks
  • 1/4 cup pure Maple syrup
  • 2 tbsp balsamic vinegar
  • 1/4 cup Dijon mustard
  • 3/4 tsp garlic salt
  • Fresh cracked pepper

Directions:

Season chicken with garlic salt and pepper and place in slow cooker. Combine maple, balsamic, and Dijon in a small bowl and whisk until smooth. Pour over the legs, making sure the chicken is covered.

Set a 6-quart slow cooker to HIGH and cook 4 hours, or until cooked through and tender.

Basil-Garlic Rubbed Pork Chops

I saw this recipe on the Food Network and decided to give it a try. I blended together the marinade then let the chops sit in it for about an hour before cooking them in my grill pan. They tasted fantastic! I loved the garlic/basil/lemon flavor of these moist and tender chops and so did the rest of my family. I served them with Creamy Mashed Potatoes and Roasted Grape Tomatoes with Fresh Basil and Balsamic Vinegar and  they paired beautifully together. [1][2][3]

Blend together the basil, garlic, lemon juice, and olive oil until smooth. Place the pork chops into a baking dish then smother with marinade then toss to coat evenly. Place into the refrigerator for 30-60 minutes.  Remove the pork 15 minutes prior to grilling. Season both sides of the pork with sea salt and freshly cracked pepper, to taste.

Heat a grill pan coated with cooking spray over medium high heat. Once the pan is hot, add the pork and cook for 5-6 minutes then flip and cook for an additional 3-4 minutes or until pork is cooked through and reaches an internal temperature of 145 degrees. Remove from the grill pan and let sit for 5 minutes prior to serving. Enjoy.

1 cup of fresh basil leaves
3 cloves of garlic
2 tbsp lemon juice
2 tbsp olive oil
Sea salt and freshly cracked pepper, to taste

Gordon Ramsay’s Chicken Piccata

3 tablespoons Olive Oil
1 head Garlic halved horizontally
4 chicken breasts
Sea Salt & freshly ground black pepper
2 sprigs Rosemary
200 ml Dry White Wine
200 ml chicken stock
3 tablespoons Capers drained
100 ml crème fraiche

1. Heat the olive oil in a pan and add the garlic halves, cut side down. Allow the garlic to infuse the oil over a medium-low heat for a minute, then increase the heat slightly.

2. Season the chicken chops with salt and pepper and add to the pan. Throw in the rosemary and fry the chicken for 11/2–2 minutes on each side until golden brown. Remove and discard the garlic and herbs from the pan.

3. Pour off the excess oil from the pan, then add the wine, scraping the bottom to deglaze. Add the chicken stock and bring to the boil and let it bubble until reduced by half.

4. Stir in the capers and crème fraîche and simmer for a minute or two until the sauce is the desired consistency. Season generously with salt and pepper to taste.

5. Spoon the sauce into the middle of six warm plates and place the chicken on top. Serve immediately accompanied by some boiled jersey royals.
