It is imperceptible, however it is as if things and people resets themselves on the "efficiency" button. The effect is that of the shock wave of a stone thrown into a pond. The founder of Eataly (37 stores in the world, about 465 million euros in turnover) arrives with a quick pace, the unmistakable mustache and a smile between the amused and impatient. I wait for him sitting at a restaurant table Land, contemporary bistro with huge artisan grill, in the renovated Rome Ostiense store. Founded in 2011, this space holds the primacy of the most grateful Eataly in the world. It has just been relaunched with a 2 million euro operation and an unusual and innovative collaboration with IKEA, announced by Farinetti himself with Andrea Guerra (executive chairman of Eataly since 2015): a 700-square-meter pop-up store, with a focus on the kitchen and living area.
